Beef Pot Pie III

Pretty good. I found I had to bake the pie longer than the directions said (more like 35-40 minutes) and that the beef didn't take nearly 2-3 hours to cook...more like 1 hour. I may increase the amount of gravy a bit next time and mix it in rather than just pouring it on top.

Lemon Cream Pasta with Chicken

This wasn't particularly creamy. It tasted strongly of heavy cream and lemon. The whole thing was a bit dry. I've been making an average of 2 or 3 new recipes from this site each week for the last 6 months and this was the first time my husband said, "You can't give this 0 stars, can you?"

Beef Barley Vegetable Soup

Very good soup. I only used 2 lbs of roast (leftovers) and think 3 would have been too much. Next time I will double the barley an possibly add another bouillon cube for flavor.

Alaska Salmon Bake with Pecan Crunch Coating

I love seafood and this recipe is headed straight to my top 5 seafood favorites! I recommend making it just the way it's written the first time. I see a lot of reviewers suggesting a bit more of this, less of that, and I understand that we all have our own preferences, but really this was very good as written and the perfect baseline, even if you do tweak a bit.

Bacon Popovers

Wonderful! We did take the advice to add cheese but just a tiny bit -- 1/4 cup cheddar. The only change I would definitely make past that is to increase the salt...not sure how much yet but I'll start by doubling it and go from there. These have a subtle flavor, but I would not call them bland. I wouldn't add more bacon or it might be too greasy. Instead, I might add onions, peppers, and/or mushrooms in the future (pre-sauteed). This is a good base that I plan to have some fun with.

Good Old Fashioned Pancakes

I've tried about 8 different pancake recipes over the past few months (one each weekend), looking for the perfect one. I kept bypassing this one because it was so simple. Silly me! This is what a pancake is supposed to taste like. I made it as is - light, fluffy, perfect!

30-Minute Minestrone

Good, quick, and easy. I did put 3 or 4 times the amount of elbow macaroni in to make it more of a main dish soup. I've started making my own soup at home since my husband is working from home and it seems yummier and more cost effective to make a pot of soup than to buy cans. This one is my second favorite so far (my favorite is a chowder though, so maybe not a fair comparison). I followed the advice of adding the spinach at the last minute so the leftover spinach isn't limp and so even my leftover soup was very yummy. When reheating, I had to add a bit more water to the bowls because the macaroni absorbed it.

Honey Oatmeal Bread II

This one is a keeper! I made it just the way it is but left off the topping out of pure laziness. Oh, and it needs more than 4 cups of flour -- a lot more. I didn't measure, just kept throwing more handfuls into the Kitchen Aid until it looked right. I think next time I'll start with 5 cups. It was a wonderful sandwich bread, possibly the best I have made so far. It's not too heavy, nice and soft, and has a slightly sweet flavor that neither gets in the way nor overwhelms. It is closer to a white bread than a wheat bread, but after making this I do not think I will make a plain white bread again. They tend to be too boring.

French Buttercream Frosting

My birthday boy (3) usually eats the icing and nothing else but even he did not like this icing! It did not taste good at all and I felt so bad for him because I was trying so hard to make him a nice birthday cake. It wasn't nearly sweet enough and it was incredibly bland. It was very fluffy which made for a slightly insubstantial texture, detracting further from the total lack of sweetness and flavor. I didn't have a need to pipe it so I can't say for sure, but I would think this would be a very difficult consistency to decorate.

Mom's Island Treasures

I made these cookies on a whim this morning and I think I'll be handing these out at Christmastime! They were wonderful. I followed the recipe to the letter except that I didn't have any chocolate chips (thought I did when I got started) so I chopped up some semi-sweet baking squares into chunks. I think next time I will use chunks again, though not ones I have to chop myself. I also think I will stick with semi-sweet instead of doing milk chocolate like the recipe says. I think that might be too sweet for me.

Banana Pancakes I

These were ok, but I don't plan to make them again. The mushy bananas made for an unappealing texture -- some have called it doughy but the pancakes are fully cooked. I think I'd rather put bananas on top of the pancakes.

Banana Sour Cream Bread

This was all right. I've actually got a banana bread recipe I've been making for years and really like, but was looking for something different -- just to mix things up. This wasn't it. This was just more sugary and fattening without tasting much different.

Pork Chops Deluxe

Delicious! The only thing I found was that I wanted less meat and more sauce/rice. I made the full recipe, intending to serve 3 people for 2 nights and I ended up finishing off the sauce and rice and having leftover meat. Next time, depending upon how many I want to serve, I will either cut the meat in half (to serve 3) or double the sauce/rice (to serve 6).

Asparagus Angel Hair Pasta

This was good but there were two problems with it. First, I didn't like the cheese. Next time, I will use a different type. It's just as well, it was very expensive cheese. Which brings me to my second issue. This recipe was pretty pricey. The next time I make this, it will be when asparagus and avacados are on sale.

Chocolate Caramels

This was my first attempt at candy making and I think it turned out very well. This was a good first recipe -- not too complicated. The directions here need some clarification. I deduced, by reading to cut the candies into 1" squares and putting that together with the 64 servings, that we needed an 8x8 dish. (8x8=64) The recipe should have specified. I also deduced, by reading through twice, that I needed to line that 8x8 dish with aluminum foil. Once again, it didn't specify. I chose to spray my foil with pan so it wouldn't stick...don't know if I was supposed to or not but it turned out well and did not stick, so I think I'll do that again. Once I finished reading in between the lines of the recipe and actually made it, it was very simple and turned out well. I went ahead and did as a previous reviewer suggested and only heated to 243 degrees because I like a softer caramel. The texture was perfect and the taste was great -- subtle chocolate flavor.

Central American Tacos

Well, I thought it was a 4 but my husband and son didn't like it much at all so 3 it is. Keep in mind that this is different and that will not appeal to everyone. My husband thought the beef was bland and that the dish needed cheese. Basically, he wanted Tex/Mex, which I was specifically trying to get away from. I thought just using salt and pepper was fine for the beef, that the sauce added all the flavor the dish needed, and that the potatoes were a great touch. The only thing I would change is to use wheat tortillas. I just like them better. I know they aren't as authentic. Of course, I won't be making these again for my family so that's kind of a moot point. :=(

Needs tons of salt. I know you retain water with salt but in the long run it'll balance out. I also added garlic powder, pepper, and Italian seasoning.
