Turkey Picadillo II

Delicious! I had never heard of Picadillo and stumbled upon this recipe when looking for something utilizing ground turkey - what a find! My whole family loved it!! I did reduce the cayenne to 1/4 tsp for my kids taste, but it still had a little kick, and it already has a lot of flavor from the other ingredients. I also added a can of drained chopped tomatoes and served it over brown rice. This is definitely a keeper and will be made again and again. Thank you!!!

Key Lime Pie VII

Great recipe! So easy and so good. Juicing the limes is tedious, but it is worth it. I added just one tiny drop of gree food coloring for the slightest hint of color and I made my own graham cracker crust. Everyone loved it - I will definitely make this pie again!!

BLT Dip

This was good right after I made it. However, I let it chill overnight as some suggested and regretted it. The bacon absorbed moisture and lost its crispy texture to the point of being mushy (and I cooked the bacon myself - did not use precooked or bacaon bits). I'm not sure I will make it again, but if I do I would add the bacon just before serving.

Sicilian Pineapple Pork Roast

Really delicious! I did alter slightly by using a pork tenderloin. After browning, I mixed all of the other ingredients together (including garlic instead of placing in roast) and poured over the top prior to putting it in the over. I cooked it a bit longer to make sure it was tender and boy was it ever. I served it w/rice pilaf & green beans and received rave reviews from my husband and kids!!

Delicious. I was worried they would be too sticky and hard to press in & then get out of the pan, but I didn't have any trouble. Instead of butter, I sprayed the pan with Pam. Fun to make with kids.

Butternut Squash Soup

Really delicious soup. I used 1 eight oz package of cream cheese (lowfat even) and it was still very rich and creamy. An immersion blender is much easier than transferring to a blender in batches. I will definitely make this recipe again - I could barely stop sneaking spoonfuls before I served it!

Bacon and Tomato Cups

I rated this only two stars because I would not serve these as the recipe is written. The filling is delicious, but the biscuit dough is just overwhelming. It expands so much these are not "cups" but little biscuits with toppings. I even tried using 1/3 of a biscuit per muffin cup and I still thought they were WAY too doughy (and I used regular buttermilk biscuits, not Grands). Luckily I made them ahead of time and found that pie crust dough works quite well (and you can buy it pre-made so it's just as easy as using biscuits).

Pumpkin Fluff Dip

Great recipe! The presentation is festive and the dip is delicious. My kids loved and so did my husband who isn't really a big fan of pumpkin. I liked ginger snaps best for dipping. I will DEFINITELY be making this for years to come!!

Eggplant and Zucchini Casserole

This was good - I added some diced ham since my husband doesn't like main dishes with no meat! I also used a can of diced tomatos to add a little more moisture. We all like this very much and all of the leftovers were eaten for lunch throughout the week.

Cuban Ropa Vieja

Excellent!! I made it just as the recipe indicates but with more garlic, cumin & cilantro. The meat was very tender & easy to shred after 3 hours on high and a couple more on low. I served it over white rice & black beans w/some more fresh cilantro on top. Really delicious!! We don't have any Cuban restaurants in Southern Ohio so it was a real treat. Next time I'm going to try to find a recipe for fried plantains to go with it!!!

Jammin Good Bars

These were very good, however I would make a few slight adjustments if I were to make them again. I would use more than 50% of the crumb mixture on the bottom and less than 50% on top. I would also use more than 10oz of preserves - I had an 18oz jar but did as the recipe said and used only 10oz - they would have been even better if I had used the whole jar!

Hobo Dinner

After adding some ingredients as others suggested I found this was pretty tasty. However I don't think aluminum foil is the best choice to contain a family sized meal (though probably okay if you do individual portions). The juices leaked out and I found myself scrambling to add foil so it didn't dry out. In the future, I use one of those easy to seal oven bags.

Baked Honey Mustard Chicken

Excellent easy recipe I'm sure I will use again & again! I followed others' advice and used dijon mustard as well as all of the other spices in the recipe. It was perfect - not bland or overpowering. I also covered with foil for 40 mins (thick chicken breasts) then flipped & removed for the last 10 minutes. I sliced the chicken and spooned sauce on top then served with stuffing and green peas. My husband loved as did my two young children!!
