The Best Thai Peanut Sauce

The best!!! I use fish sauce instead of soy, or vice versa, depending on what I have in pantry. Used on pasta and rice noodles, with scallions, mmmmm!!!

Easy Morning Glory Muffins

Very good as is but I made substitutions to fit our family. Subs. strawberry applesauce for oil, 1c brownsugar, 1/2c white sugar, 1c unbleached flour, 1c ground oats, lemon extract, apples, coconut, carrot, and vanilla extract, no nuts. Great recipe that can be adjusted to what is in the pantry.

Beth's Spicy Oatmeal Raisin Cookies

Great cookies, I used 50/50 smart balance blend sticks and I didn't have any oats so I used instant apple cinnamon oatmeal packets and omitted the white sugar and added white chocolate chips, wow, really good ;o

Baked Ziti III

Great substitute for ricotta, family loved it. I also mixed sour cream and parmesan with ziti before layering. I used shredded italian cheese blend, ground turkey and homemade sauce. Even my hubby who swears he hates sour cream loved it.

Cottage Cheese Chicken Enchiladas

I would never have thought this would work, but oh my it does. I added a sprinkle of cheese in each tortilla along with the ricotta and it made a delightfully, creamy filling. I used a homemade enchilada sauce, and the secret there is to add a tsp or two of dutch cocoa powder, yum yum. Delicious.

Crisp Lemon Sugar Cookies

Made even better with the following adj. additional 1/4 cup sugar, used butter only,1/2 tsp salt, 2 tsp lemon extract and zest of 1 lemon. Baked @ 375 for 8 min. No need to flatten before baking, they spread if you use butter only. Also made glaze with juice of 1/2 lemon and 1/4 cup powdered sugar, very nice twang addition!
