Quick and Easy Chicken and Rice

This was easy to make and very good! I made a few changes to my personal taste and what I had on hand. I used jasmine rice, 1 1/2 c cheese(because cheese is good), 1 1/2 c brocolli and 1 c mushrooms. I added dry bread crumbs in the last 5 mins also. My boyfriend was suprised it turned out because the sauce was so full of vegetables and chicken, but it was delicious! I will definately make this again - its quick, easy and tasty.

Extra-Easy Spinach Lasagna

this was really good! i made it because i have alot of papers due this week and dont have time to cook for my boyfriend. he loved it! i added a bit more ricotta, italian seasoning, a pinch garlic salt, and pasta sauce and added lean ground beef. used 11 noodles, three layers. it was almost overflowing, but i like hearty pasta. next time i'll try cottage cheese and a mozzarella/parmesan cheese blend. :) will be making this again and again!

Mediterranean Quinoa

This is really good, with modifications.. I decreased broth to 2 cups, used low sodium chicken broth, added canned tomatos, added pineapple slices and a bit of pineapple juice, red chili flakes, a bit of chili paste, two orange peppers and one red and then crumbled a little feta on the top. My health-suspious boyfriend even liked it! And it's even better the next day. Very filling and great for you!

Morning Glory Muffins I

I make these ALL the time! These are awesome(and the nuts keeps my boyfriend away so I don't have to worry about him sneaking them) I do make a few changes though to make them healthier. I use 1-1/2 c whole wheat flour, 1/2 cup white flour, 1/2 c white sugar and 1/2 c brown, omit raisins - i put in slivered almonds in, instead.. I use 1 c apple sauce for the apple butter, a sprinkle of dried cranberries and add 1/2 c ground flaxseed. **make sure the apple is tart like a granny smith for the flavor! it makes a big difference** Soon i want to try it with pumpkin puree rather than apple sauce.. :)

Zucchini Saute

This was good, and healthy, but I found it a bit bland. I added a bit more pepper and 1/3 cup store bought salsa and it gave it a nice kick! I will make this again.

Makeover Morning Glory Muffins

i made these last night and already reviewed them, but they seem better the next day. AND, my anti-nut, health food-hating boyfriend actually took one to work today! So I thought I should re-review. These are good. However, the are lacking apple chunks :) I'll do that next time as well as add slivered almonds.

Egg-Free Low-Fat Oatmeal Cookies

i followed the recipe exactly, but i wouldn't call thse cookies. they're like rubber and there is no cookie texture at all. mine didnt spread, i had to flatten them. although the flavors are fine, it has potential, but will not be making this again.

Lower Fat Banana Bread II

This bread is great! Better than the regular, full fat bread. I add chocolate chips to mine in place of nuts(for my boyfriend) or slivered almonds are good in it as well. I usually use 4 extremely ripe, frozen(thawed) bananas and it really makes it moist and brings out the flavor. I use this recipe every time I make banana bread, which is usually once a month, and I am always happy with the turn out.

Oatmeal Cocoa Macaroons

I just made these today, and they are delicious! They totally satisfy chocolate cravings. I used 3/4 butter rather than shortening and boiled for 1 1/2 mins. This makes them really fudgey :) mmm.

Best Brownies

These are soo good! I make these when I am really pressed for time, and they are ALWAYS perfect. These are good with chocolate cream cheese icing also. Otherwise I just have them plain... Soo delicious!!!!

mmmmm this is delicious! it's soo moist and chocolatey. i have never made a by-scratch cake but i will never go back to the box after this! mmmm. they would be great cupcakes too. i'll do that next time :)

Butterscotch Gingerbread Cookies

these are delicious!! I like moist, chewy gingerbread, and these definitely fulfilled my expectations. I thought even 3/4 of the chips were a bit much, so the full bag I think would be super sweet. I doubled the spices, so you can taste the ginger in them. Since these will be gone so fast, I'm going to make gingerbread snowmen(because just doubling the spices creates perfect gingerbread) and leave out the butterscotch chips. This will from now on be my gingerbread recipe. :)

Chocolate Crinkles II

delicious! crispy outside, brownie like inside. bake@second rack from top in the oven in order to 'crinkle', and flatten them slightly because they dont spread much. freezing them for 1.5 hrs is a good way to speed things up if you are pressed for time. i've made these for the past two years every christmas and they are beautiful and easy :) thanks!!

Spinach and Feta Pita Bake

delicious! added red pepper instead of mushroom and couldn't find sun-dried tomato pesto so i just used regular pesto and chopped up sun-dried tomatoes. my boyfriend told me that next time to make him two because they are so good! super easy too. will definitely make again.

Cowboy Cookies III

well, i took some suggestions of others and used only 3/4 c of both sugars, 2 tsp vanilla, 1egg + 1 yolk. I didnt have a sifter so I could sift the dry ingredients and they never spread. i thought the dough looked dry but i tried anyway. in the oven after 10 minutes i attempted to flatten them, they were in there for about 20 minutes and they are really cakey and crumbly. i'll try again though..

Apple Crisp III

I've never made apple crisp before, but I split the sugar to half and brown half white, as well as added about 1/2 cup of oats and my mom said it was the best she's ever had! Thanks, I'll make this again and again.
