Mouth-Watering Stuffed Mushrooms

These were very popular at my son's highschool graduation party. People kept asking where I bought them! I told them: I bought the mushrooms at the farmers market, the cream cheese at grocery store and already had the spices at home!

Fluffy Pancakes

Make these pancakes! Make these pancakes! Don't change ANYTHING the first time you make them; taste perfect, tender, just right pancakes! My four daughters consumed about a zillion of these. You definitely need to increase the batch size. I made a triple batch and got about 16 4-5 inch pancakes. I also tried adding vanilla (second batch) as suggested by other reviewers. I don't recommend it. On the third day I made it with Apple Cider Vinegar to "sour" the milk and added graham flour to the mix (1:3 ratio). Holy smokes! These were the BEST pancakes I have ever eaten! I can't wait to make them for my husband (away on business), father and father-in-law tomorrow on Father's Day! I think I will add some blueberries and make grown men cry... By the way, I am slightly obsessed with these pancakes! I will never use a store bought mix again!

Fresh Ginger Cookies

Here is the thing about these, you will have to make a double batch! I made the first batch just like the recipe and was excited but wanted MORE GINGER! I was making them for the holiday party and wanted them to really stand out. I used the 2 TBL of fresh ginger but also added 1 tsp of dried ginger that comes from a bottle. Also, to add more pep, I added some freshly ground nutmeg to the outside sugar that they are rolled in before baking. There was no stopping them from there! Gone, gone, gone! Repeat: Just they way they are deserves 5 stars, but don't be stingy with the ginger!

The Best Chicken Fried Steak

I would have given this all 5 stars for crispiness alone! If you like flavor, you'll have to kick it up a notch or 2. Easy enough! I recommend adding MORE pepper, salt, garlic and pepper sauce! Next time I make this, and there will be a next time, I will double all the seasonings. Also, since you'll have extra milk mixture, mix it with your leftover flour, 1/2 cup of cornmeal and 1 tablespoon of onion powder. Then drop by the spoonful into the hot oil. My twins called them cornballs, I called them corn fritters. Either way it makes a really nice addition to this Southern style meal!

These are easy enough, but they sure don't pack the flavor I wanted. Bummer! Fun to make and quick as well. I will be experimenting with these because they have unrealized potential...

Christmas Pinwheel Cookies

Everything about these were perfect! I made two batches and added some unsweetened cocoa powder (in lieu of flour) to the one batch I eventually colored red. It made everything come together! I made soooooooooo many cookies and these were my favorites!

Maple Sausage Balls

They would be a little dry if you cook the sausage first. If you have already cooked your sausage, you need to add some sort of fat into you mixture. These were really good! My family adored them!

Boston Baked Beans

The taste was great, but the sauce was a little too thin. I recommend using a lot less water when you bake them if your beans are already cooked. They were easy to make, but I will definitely be adjusting before making again.

Raspberry and Almond Shortbread Thumbprints

All I can say is MWAH! These were perfect in their texture and flavor. We tried a couple of seedless berry jams as well as peach and apricot. All of them were consumed too quickly! I ended up making 4 different batches just so I could complete my holiday gifts! My kids would eat any broken cookies, broken meaning a little jelly had bubbled over the top of the thumbprint well. The good thing is, them eating the cookies kept me from eating the cookies! :)

Enchilada Casserole III

This would be 5 stars if it was a little less salty. I will make it again, it has potential with some adjustments. Next time I will definitely just used the canned enchilada sauce. It seems like the powder made the final dish sort of dry and (brand depending) may be why it was too salty. The family loved it though!

Best Peanut Butter Cookies Ever

These were REALLY awesome and full of peanut butter. We did use half brown sugar / half white sugar, but I know these would taste just as good with just white sugar. They were crumbly without being too hard. It was easy, tasty and totally family friendly! ps. Don't be afraid of how simple this recipe is! Ours didn't spread as much as they warn you, but maybe that was the brown sugar?

Basil Tomato Soup

If you are looking for a basic, easy, tasty recipe, look no further! Tastes delicious, even though I had to use milk (no cream at home) and dried basil (once again, no fresh). I can imagine how fun this recipe will be to play with! Adding garlic? Onions? Rice? This recipe will grow on you! I believe it is very easy to adjust levels of fats by eliminating some of the butter, using low fat milk and low fat chicken broth. Also lowering the sodium would be as easy as using low-sodium chicken broth and tomatoes. I definitely will make this again and use my immersion blender to make it even creamier!

Gingerbread Scones

These were just OK. I even added extra ginger and was expecting a more powerful punch. I didn't like the addition of egg to my scone, either. My husband ate them and claimed them "Good". My daughters ate the top with the sugar and left the scone alone.

Lemon Scones

This was an awesome basic scone recipe! I see that some people that reviewed it were dissatisfied because it wasn't sweet, but scones are not supposed to be sweet. I only had 1 tiny lemon, so I did add 1/4 teaspoon lemon extract to boost the lemon flavor and WOW! These were the perfect texture, no eggs and if made with margarine or vegetable shortening could easily be vegan. I will definitely be making these again! Mmmmmmm!

Maraschino Cherry Almond Cookies
