Kielbasa with Pasta

I used Tofurkey kielbasa and skipped the parmesan and butter to make this dish vegan. I also didn't have any bell peppers on hand so I substituted 4 small sliced zucchini, the result was wonderful. I would totally make this again. Super quick & easy weeknight meal.

Lime-Curry Tofu Stir-Fry

It's sometimes challenging for me to find dishes that my whole family enjoys, adding to my challenge I'm trying a meatless diet. That said, I doubled this recipe and made it as is and my family of 6 (kids ranging in age from 5 to 19) really enjoyed this! Definitely adding this one to our favorites collection.

Honey Walnut Shrimp

My family really enjoyed this recipe. The only substitution I made was I used rice flour (gluten-free) because I couldn't find mochiko. I also double the sauce recipe like several other reviewers suggested. I will definitely make it again. VERY GOOD! :)

Pretzel Turtles

Easy and delicious! I made a double batch, so it required 2 bags of Rolos. I toasted enough pecans for both batches (about 100) while I unwrapped all those Rolos. I baked 1 batch at a time for 3 minutes. They were a huge hit and I will definitely add this recipe to my collection of "holiday treats".

Spaghetti Squash Casserole

My family liked this recipe. I thought the texture was great but, it was just a little bland for me. My husband LOVED it! We got the squash for one of his co-workers so, he took 3 servings of leftovers to work and the guys he works with also really enjoyed it. I will definitely make this recipe again.

Beef Cabbage Hash

I cooked this recipe for my husband and 4 kids...the reviews were good but, not amazing. I added 2 ingredients: 1 T minced garlic and a large handful of frozen green beans. I browned the beef with the onions & added garlic. After I added all the other ingredients I topped the mixture with the green beans before covering the mixture for the remaining cooking time. I would happily make this recipe again...it was sooooo easy! Next time I will add more seasonings (not sure what yet).
