Twice Baked Sweet Potatoes with Ricotta Cheese

Reviewed: Aug. 3, 2011
I loved this! It's just what I have been looking for a savory sweet potatoe. OtI did play around with the spices a bit but you wouldn't have to. I didn't add sugar either. YUMMY!

S'mores Crumb Bars

Reviewed: Jul. 5, 2011
I brought these to a 4th of July party and they were gone within an hour! EVERYONE loved them! I did have to increase the graham cracker/butter mixture so I would have more "crust" but left everything else the same. YUMMY!

Addictive Sweet Potato Burritos

Reviewed: May 10, 2010
Karena your a genius! This is amazing! Who would have thought beans and sweet potatoes? I used black beans and mixed everything together and I had some fresh green chilis, but used the same spice mixture. Next time I will make it a bit hotter but other than that it was great!

Chicken Wild Rice Soup I

Reviewed: Feb. 23, 2010
I really liked this. I too am from Mn. and this is a very original recipe. Thanks to the curry powder! I was a little skeptical but it sure does make the recipe! I made a vegetarian version with veggie broth and no meat but otherwise folllowed the recipe (except for the almonds which I didn't have). Yummy!

Jalapeno Popper Spread

Reviewed: Jan. 1, 2010
I just got done mixing this up for a party this afternoon. It's not even in the oven yet and I can't stop eating it! I did change it up a little...used fresh jalapenos (3 with no seeds) some fresh garlic and cheddar cheese instead of the parm. I also did 1/2 and 1/2 low fat mayo/sour cream. When I bake it I'm going to mix the parm with some panko like other reviews suggested. I can only imagine that it will get better! Thanks for a new dip recipe!

Spinach Enchiladas

Reviewed: Dec. 30, 2009
These were really good after a few changes. I added black beans, corn, adobo, dried jalepeno, paprika and chipolte peppers. Not a fan of corn tortilla so I used flour. Also a my special enchilada sauce. YUMMY! Can't wait for leftovers tomorrow!

This was great! The only change I made was to grill the mahi mahi. I think this will be good with salmon too. Thanks for posting!

Szechwan Shrimp

Reviewed: Jun. 12, 2009
Can I give this 10 stars? This was so easy and is better than my takeout place. I always have the ingredients in my pantry. Give this a try you won't be disappointed (but do double the sauce..I couldn't get enough of it)

Curried Coconut Chicken

Reviewed: Feb. 15, 2009
I thought this was pretty good. I don't think I'll add sugar next time. I did take a hint from other reviews and cooked the curry with oil for about 5 minutes first. I also added a potatoe and some cayenne pepper. I think I will also use red curry paste next time for some more heat. Thanks for making curry easy!

Pumpkin Spiced and Iced Cookies

Reviewed: Oct. 12, 2008
These were pretty good considering I usually like crunchy cookies. I added 1/2 tsp of ginger, doubled the pumpkin pie spice, used 1/2 c brown sugar 1/4 c white sugar. After they cooled I took some leftover cream chz frosting put a little milk in it and drizzled over cookies. I will be making these again!

Spicy Chipotle Turkey Burgers

Reviewed: Aug. 22, 2008
This is a great recipe! I've made this a few times now and change it just a little each time. I add a few more chipoltes and some of the sauce, fresh garlic, green chilies. I eat turkey burgers all the time and by adding the chipolte it sure makes it moist. Thanks for posting!

Spanish Rice Bake

Reviewed: Jul. 24, 2008
This is really good. I used ground turkey (only 1/2 of a lb) and put in some chipolte peppers in adobo sauce. I also used the thai chili sauce. It had such great flavor. The only thing I will add next time is some mexi corn. No brown sugar (forgot it) and did it all in one pan for some pretty easy clean up. Easy meal for a work nite!

I must say that with a few alterations this rocked! I added spinach, onion, asiago cheese, roasted garlic and used 1/2 lite sour cream & 1/2 low fat mayo. My son who said I'm not going to like that, loved it!

All I can say is "YUMMY". I could not stop eating these! I too added hot sauce and I used panko crumbs and some parm cheese. I would recommend adding just a little salt before baking. Thanks for a GREAT recipe!

Jay's Signature Pizza Crust

Reviewed: Mar. 16, 2008
This crust rocks! I did change it just a little...I use about 1 1/3 c of wheat flour along with the white flour and I also added garlic powder and oregano. This is so easy and quick to throw together that I don't even order Dominos anymore! Thanks Jay!
