Banana Bread - Quick Bread for Machines

Quick, easy, delicious. Worked perfectly, as written, in a Zojirsushi bread machine. Added chopped walnuts along with all other ingrediants. Wonderful!

Angel Hair Pasta with Shrimp and Basil

So simple and oh, so very delicious with lots of garlic and fresh basil. We doubled most ingrediants; used only 3, 28oz cans of tomatoes and it made plenty for dinner, and several take to work lunches. Rarely does food qualify as an experience for me, but this dish did. Absolutel fantastic.

Chestnut Stuffing

My first attempt at stuffing, and it was a awesome! After stuffing the turkey with it, I realized I'd forgotten the eggs and milk step. Had more stuffing that the 18lb turkey could take, so baked the remainder. Both came out delicious, with the stuffed being more moist and the baked more firm but not dry. One problem I did have was that many of the chestnuts were moldy and/or black, so actually ended up with less than the recipe called for. Next time, I'll buy more nuts.

Smothered Beef Liver

I like liver, but this is the first time I've cooked it, and, the first time I've eaten it without gravy. Cooked as written. Very easy and very good.

Beef Burgundy III

Quite possibly the best meal I've ever made! I had to use a chuck roast, and regualr cream of mushroom soup, because that's what I had. I followed another cook's suggestion and dredged the meat in peppered flour before searing it with fresh rosemary and thyme. The rosemary and burgundy, together, gave it such a rich, heady falvor.

Baked Trout Saratoga

Very easy prep, cook and clean. Desperate to use garden zuchinni and squash, I diced up one of each, and mixed them in with the tomato mixture, with delicious results.

Simple BBQ Ribs

Boiled "country style" pork ribs as directed, but added 1/2 cup soy sauce and omitted the salt, then grilled. Tender and delicious! Next time, I'll start them earlier so they can marinate longer.

Candied Chicken Breasts

I tried twkitchen's idea, skipped the frying, and placed the raw breaded chicken in the baking dish with the yummy sauce, baked for an hour, and served over rice. Everybody liked it, and it was easy to prepare with minimum time in the kitchen. Think this would be good with pork or ham, as well.

Fabulous Beef Tenderloin

It really is fabulous! And so very easy. Think I'll go low sodiuim soy sauce next time. I love the salty taste but the butter and salt combined made me feel a little guilty...like movie popcorn! All in moderation, though; can't afford tenderloin or the movies often enough for it to kill me!

Easy, Cheesy Tortellini Bake

Pretty Darn Good! I used 2 jars of alfredo sauce, 1 marinara, 2 9oz bags of meat tortellini, a half pound of cooked italian sausage, extra spinach, and a small bag of noodles I had left over from a crock pot soup package. Poured it in a 9 x 12 pan, baked for 15 minutes, added cheese and put it back in the turned off oven for several more. My son didn't even realize he was eating spinach until his next to last bite; declared it tasted too good to matter and cleaned his plate! Thanks for the great recipe!

Honeyed Pork Chops

Easy, fast, moist, and delicious! I sliced the onions and placed them in the bottom of the baking pan, and covered for the first half of the baking time, as suggested by a couple of other cooks. Don't know if it made any difference in the moistness, but didn't think it would hurt, and feared the dreaded dry chop!

Mexican Casserole

Fast, easy, and delicious! Other than substituting crushed chips, which I didn't have, for torn tortillas, I followed the recipe as written. Each family member doctored their portions to their liking; adding sour cream, more salsa, hot sauce, chopped onions, crushed red peppers, etc..
