Creamy Chicken and Wild Rice Soup

Reviewed: Oct. 29, 2009
YUM!!! Man of man this is good. I am pretty picky too. Used reduced sodium chicken broth, Uncle Ben's boxed rice (was a little chewy, next time I will let it simmer a bit before I take it off the heat), addred carrots, celery, and more onions. I accidently put the seasoning packet in with the rice and not the roux. Turned out great though. Will make again and again....Thank you so much for this recipe!!

Ham and Bean Soup

Reviewed: Sep. 28, 2009
I was very sad because this didn't come out as I had hoped. Not sure if I let beans soak to long to degas causing them to soak up more water- and not compensating by adding less water in the soup. Forgot the celery but over all the soup tasted bad. I had to add lots of beef boullion and seasonings to make it edible. It makes a ton. We don't waste food so we are still eating it now. Sweet cornbread helped.

Blue Cheese Beef Tenderloin

Reviewed: Aug. 31, 2009
The tenderloin was outstanding. I put the blue cheese topping on the side because it was a little to much for me. Thank you for the recipe!

Chayote Soup

Reviewed: Aug. 31, 2009
Good taste. Needs a bit more substance though. Maybe some meat or another vegetable. My husband doesn't like his food pureed. "I want to chew it for myself." I kind of felt this way for this soup too.

Southwestern Egg Rolls

YES! These are AWESOME!! We baked them instead of frying and they are super. The cilantro sauce that everyone recommends goes perfectly with these as well. These are already a favorite in our house. Thank you SO much!

Yummy!!! We have made these twice already. Thank you for the recipe. We did cut the recipe in half- and that is more than enough for us - for a week!

My Country Style Steak

Reviewed: May 14, 2009
This was ok. I let the mixture simmer for over an hour- I added mushrooms and sauted onions. Instead of the soup mix I used french onion soup. The taste was a little off and the meat was a funky texture. I will not make again but thanks for the recipe!

Pheasant Phungi Perfection

Reviewed: May 12, 2009
Being the frugal person I am I didn't buy the mushrooms that were dried. I instead used fresh mushrooms. I substituted chicken broth for the mushroom water. It was ok. My husband liked it but I wasn't overjoyed for the taste. I really enjoy mushrooms though. Will probablly try again with the pheasants in the freezer and buy the dried mushrooms. Thanks for the recipe!

Sylvia's Ribs

Reviewed: Apr. 6, 2009
I liked these so much better than cooking them in the slow cooker. I like my ribs tender but a slight crust on the sauce (if that even makes sense). Next time I make these I will put them on the grill and see if that does the trick! Thanks for the recipe!

Chicken Piccata II

Reviewed: Mar. 11, 2009
I LOVED this recipe!! I followed the following suggestions: dredged in AP flour, diped in beaten egg whites then dregded again, shaking off any excess. I cooked the chicken in butter/olive oil till brown and crispy. Make sure to keep the chicken warm after removing from the pan. To the pan I added 1/2 cup lemon juice, 1/2 cup chicken stock, 1 cup white cooking wine (we don't have alcohol in our home). Reduce till slightly thickened. At the end whisk in about 1 tbl butter. I do not return the chicken to the pan rather I plate the chicken and pour the wonderful sauce on top. I couldn't get enough!

This was okay. Edible but not a favorite. I didn't like the enchilda sauce... should have made some or bought something other than Old ElPaso. Thank you for the recipe.

Russian Mushroom and Potato Soup

Reviewed: Mar. 11, 2009
This was a good soup recipe. I added the sour cream instead of half and half. I use chicken bullion and tried using less than was required to cut down on sodium. My father LOVED the soup- with cheese I enjoyed it more. Thank you for the recipe!

Broccoli Cheese Soup

Reviewed: Jan. 29, 2009
Oh my oh my!This is wonderful! I follwed some suggestions by others...doubled the broccoli, added 1 lb cheddar jack cheese and half of the velvetta. I didn't use the chicken broth or water. I used some half-and-half instead of milk. Super with some bisquits! Thanks so much for this recipe!!

Carne Con Chilies

Reviewed: Jan. 22, 2009
I omitted 2 red peppers, and only used half of the jalapenos. I enjoy spicy things while my husband doesn't. I thought that it was WAY to spicy and had very sour flavor. My husband really liked it though. I also enjoy tomatillos- but this recipe just didn't work for me. My hubby really enjoyed it- he actually asked for me to cook it again. After dumping a bunch of salt on the finished product it tasted better to me... but then I felt guilty for eating it because I was sure my blood pressure would rise :) Not sure if the tomatillos were bad or what. Prob. will not make again. Thanks for the recipe though. I hope other enjoy!
