My Crab Cakes

I love these crab cakes! I double up on the crab and use two cans and this makes them extra tasty. Also, I am sure to buy the highest quality canned crab I can. I tried adding extra old bay one time but we found it too spicy. These are so easy to make and taste so good!

Chicken Fried Chicken

I made these last night for dinner and they were a huge hit! I didn't have saltines so I just used buttered round crackers I had on hand. I also cut the recipe in half to serve just two people and it was enough food, but there were no leftovers using the thinly sliced chicken breasts. Next time I'll make extra because they'd make great leftovers for lunch. I bought a box of potato flakes, used the called for amount for the recipe and used the rest of the opened package to make a side of mashed potatoes and also heated up some canned corn for a side. It was a delicious, balanced meal!

Downeast Maine Pumpkin Bread

I followed this recipe exactly and it was amazing! I wouldn't change a thing, although I was glad I had toothpicks to check the center of the bread because my needed to bake longer than the called for time. This is my new favorite recipe, and I will be making it many times again. It's amazing for breakfast and late night snacks especially! I look forward to the holidays so I can make loaves and wow my neighbors and friends! UPDATE: I have made this again, and again, and again.... more than any recipe I've ever found! My hunny and I cannot get enough! I have some baking right now!

Chicken Cordon Bleu II

Yummy!! The sauce that goes on top is to die for. One thing I was confused about while making the recipe was whether I should empty out the juices from the chicken in the pan before I added the cream and cornstarch. The answer is you shouldn't! I didn't, and it was delicious! Also, I had trouble getting my chickens rolled up perfectly with the cheese and ham inside (the ham and cheese were kind of bursting out the sides) but this is OK! They definitely kept their shape after they were cooked and the toothpicks were removed. This meal took a bit too long for me for a weeknight after work, but I will DEFINITELY make it again on a weekend!

Yikes... I didn't like this. But I had never had aioli sauce before so I didn't know exactly what to expect. It's probably more just a personal taste than the recipes fault. I wouldn't make it again. My boyfriend said it tasted like cardboardy butter.

Pizza On The Grill II

My pizza on the grill was a DISASTER!! I will never make it with raw dough again. The dough fell through parts of the grill, and flipping it was a hilarious but disasterous task. I didn't even cook the dough all the way through either.... it was raw in the middle. I give the recipe three stars because I would never make it again and found it very difficult to maneuver.

Traditional Reuben Casserole

Next time, I'll about 1/2 to 3/4 of the thousand island/sour cream mix. There was so much that I felt I should put some lettuce on my plate for a salad. Besides this, it was good! I only used dark rye bread to avoid having to increase the cost by buying 2 different types. And my grocery store didn't offer shredded swiss cheese, but I just put slices on the casserole and that worked fine. Finally, I cut the recipe in half for 2 people and have PLENTY of leftovers!

Very yummy! I liked the flavor of the salad and that it was a bit sweet. I made the mistake of not cutting the fresh parsley small enough, and next time I'll probably just use dried parsley.

Grilled Salmon I

This salmon was DELICIOUS! It turned out great with a sweet, not overbearing flavor. I put it on top a ceasar salad with croutons, parmesan cheese and a lemon wedge!

Seafood Enchiladas

I just ate this and thought it was really disappointing. I found it pretty bland- I doused it in hot sauce. I am surprised that a mexican dish would have so little spice. I would recommend spicing this up if you plan to make it. Also, I used jumbo lump canned crab meat. My grocery store doesn't carry real crab meat, and I've always found this a bit tastier than the fake crab meat. I wouldn't even bother making this if you don't have real crab meat (the canned didn't cut it.) On the plus side, my boyfriend liked it and he's not even a big seafood fan.

Greek Grilled Cheese

I'm going easy on this recipes because I've never liked grilled cheese. But I found this to be an upscale version of blah, mushy and greasy. Just like the other grilled cheeses I've had in my life.

Barbequed Marinated Flank Steak

Seared Ahi Tuna Steaks

Yummy! This was my first time making ahi tuna steaks, and I was a bit nervous, but this recipe made it easy to turn out restaurant quality steaks. I cooked them 3 minutes on medium high (6) each side to medium well. I also skipped the popping the pepper step. Instead I just threw some regular old ground pepper onto the steaks before cooking. I didn't have kosher salt, so I used regular table salt, too. I didn't measure the amount of salt, but just shook enough on the steaks that it looked like a normal amount. I would have preferred to serve this with brown rice, but my boyfriend hates rice so I made mac & cheese instead. It was fine together, but I still think brown rice would have been a better choice!

A Nice Slow-Cooked Pork

This was so tasty! Next time I'll take the bones out of the meat before I cook it. I'll also stick with what I did this time: using only 1/2 the can of vegetable broth. I didn't put in mushrooms, but instead used carrots & potatoes (Idaho, not peeled). I layered meat, liquids, seasonings, onions, potatoes, then carrots. Just tossed it all in, didn't mix, and let it cook all day while I was a work. By the time I got home, the potatoes were nice and soft but not mushy, the carrots were the same. The meat was very tender. It's like a cozy stew! I'll definitely make it again.

Cabbage Fat-Burning Soup

Very yummy. I simmered mine for probably about an hour to hour and a half to make sure the carrots were soft throughout. I cut the recipe in half and it barely fit in my largest pot! I also used some sort of vegetable juice as the broth, it wasn't just tomato juice. I am going to eat this for lunch this week. I'm curious to know if it'll keep me full through the afternoon!
