I made this recently for my peanut-allergic son using Sunbutter in place of the peanut butter. I'm not sure if it was the sunflower seed butter, or if it's normal, but it didn't want to come together and got pretty oily on top. I was ready to throw the whole pan out when my (calm, cool, collected) husband stepped in and pressed it into the pan, blotted off the oil and put it away and said, "well, let's just wait and see". It turned out just fine. Not only did my son get to enjoy "peanut butter" fudge for the first time, but we were also able to share it with another man who used to be a huge peanut butter fan but recently became allergic. Yay!
