Berry Trifle

We were invited at the last minute to a Memorial Day get-together at a friends' house, and I'd just gotten a new trifle bowl, so of course, I had to make red, white and blue trifle :). I ran to Wally World at about 10:30 the night before and the only pound cake I could find were these eight-to-a-box mini poundcakes. I was hoping to find a lemon poundcake, or at least a Sara Lee frozen poundcake, but I think everyone had the same idea I did. I decided to do four berry layers, so I bought frozen blueberries, frozen raspberries, and frozen blackberries and fresh strawberries. I sprinkled them all with a little sugar and let them sit overnight. I decided to use cheesecake pudding (it just seemed like it'd work). Since we don't do liqueur, I decided to spread the poundcake with preserves. While I was trying to decide which one I wanted to use, I spotted a triple berry ice cream topping by Smuckers (strawberry, raspberry,blackberry) and decided on that. It's thinner than jam or jelly, so I think it'll soak into the poundcake nicely, but not turn it to mush. When I put this together tomorrow, I'm going to do traditional layers. Poundcake, blackberries,pudding, poundcake, raspberries, pudding, poundcake, blueberries, pudding, poundcake, strawberries, pudding. I've made a basic version of this before, and it's always a huge hit. I think this is a great recipe you can have a lot of fun with modifying and adding your own personal touches to. *It went over REALLY well. I made a huge bow

Easiest Peanut Butter Fudge

I made this recently for my peanut-allergic son using Sunbutter in place of the peanut butter. I'm not sure if it was the sunflower seed butter, or if it's normal, but it didn't want to come together and got pretty oily on top. I was ready to throw the whole pan out when my (calm, cool, collected) husband stepped in and pressed it into the pan, blotted off the oil and put it away and said, "well, let's just wait and see". It turned out just fine. Not only did my son get to enjoy "peanut butter" fudge for the first time, but we were also able to share it with another man who used to be a huge peanut butter fan but recently became allergic. Yay!

Grandma's Five Cup Salad

My mom made this every Christmas,and it was always a hit. I recently took it to a potluck picnic (I mean a HUGE bowl of it) and the bowl was all but licked clean. Always a safe bet when you're not sure what to take. On a side note, when I make it for my family, I use Tofutti (non-dairy) sour cream and leave out the marshmallows.

Truck-Stop Buttermilk Pancakes

Onion Rings

I'm an onion ring fiend! This recipe is super easy, and when you've got your eye on the rest of the meal, these are a blessing!! I added seasoned salt, garlic powder, pepper and cajun seasoning. The spices cut the "sweet" a little for those turned off by it. I also dredged the rings in cornmeal after the batter for some crunch. Even my onion-hating five-year old loved these. I've always got pancake mix and onions "lying around" and these are gonna be a staple. I'm gonna try baking some on a silpat next time to see how they turn out.

Scottish Shortbread IV

I made these to include in a hostess gift bag for someone having us over tomorrow. I was nervous about giving a new recipe as a gift, and even though I liked them, I tried them out on my husband and he loved them. He kept sneaking in to snatch them while my back was turned. Great recipe!!! Thank you!

I made this for St. Patrick's Day and it was a HUGE hit. Even with my cabbage wary husband and kids. I sauteed the onions and cabbage in Earth Balance spread instead of bacon fat, and mashed my potatoes with No Chicken Chicken broth, soymilk and Earth Balance spread in place of butter. I used Bac'o's in place of bacon. It was WONDERFUL. Thank you for a great recipe.

Dressing Patties

Amazing! I decided to try this recipe because I had a pan of cornbread and several biscuits left over from previous dinners. It was like Thanksgiving dinner all wrapped up into one neat little package. Huge hit with my kids. I already had biscuits made from "heart healthy" Bisquick, so I used those, and I used "No Chicken Chicken Broth" and Earth Balance spread in place of the turkey stock and butter and omitted the mushrooms (kids) and they were amazing. I also upped the spices just because we like a lot of flavor. I'll be making cornbread and biscuits just to make these!

Quinoa and Black Beans

This was FABULOUS! I tasted it as I went, and really liked it before the addition of the corn and cilantro. I love cilantro in my salsa, but think I liked the quinoa better before I added it. My husband is weird and had texture issues with the corn, but once he got it into a tortilla, he wolfed down most of it himself. I made it with the nopalitos con papas on this site, and we all stuffed ourselves silly last night. Thank you for a great recipe that reminded me of my grandmother's cooking :).

Pizza Popcorn

I thought this was great. My kids eat a lot of air-popped popcorn, and I'm always looking for new ways to spice it up. I was reading the ingredients on a package of organic pizza flavored puffs and thought- tomato powder!!! I googled it because I know manufacturers use it, but I didn't know if home cooks can buy it. You can! I'm kicking around the idea of buying some and trying this recipe again with tomato powder.
