At first, I was updating every day... I decided that was boring!  Besides, last week was busy, busy.  We finally have a vacuum (yay!) and I've been cleaning and shopping all week long!  We went to the Cabrillo National Monument, which has some of the prettiest views I've ever seen.  Our urbanSpin led us to Phil's BBQ (so much for my Ethiopian kick!)... it was pretty good!  I had a pulled pork sandwich, which was so smokey and delicious... I'm considering buying some liquid smoke to play around with.  Yesterday, hubs and I went to the Old Spaghetti Factory in San Marcos... yum!  My favorite meal there is the Mizithra and Browned Butter pasta -- they've improved it!  They added garlic, mushrooms and bacon, and let me tell you, it's yummmmm-o!  Heavy on the garlic though, almost spicy.  Couldn't kiss John all afternoon :)

This week, our menu is as follows:

Tonight (Monday), we're trying the Turkey Burgers and Sweet Potato Fries again.  This time, I'm trying a cheddar ranch recipe which sounds so good.  I'm going to the store this afternoon and trying the Italian seasoned ground turkey this time.  Wish me LUCK with those fries... last time they were quite the disaster!

Tuesday is ranch chicken and asparagus with some leftover mac and cheese from last week.

Wednesday we're having Ham and Spinach Hash.  I saw it on Rachael Ray and it made me HUNGRY.  I can't wait to try it; I love ham and I never get to eat it!  I don't know what I'll do with the rest of that big old ham steak, but I'm sure I'll find some good use for it.

Thursday is Pesto Chicken Florentine, another favorite of John's.  He has loved this dish for several years now and I don't think he'd mind if I made it EVERY night (which sometimes I'm tempted to do... this is an easy and versatile recipe!).

Friday is Citrus Chicken I found on this site, along with some green beans.  This is a great one dish (well... two dish) meal that my husband GOBBLED up the first time I made it!  Try it!

Saturday we're having spaghetti and meat sauce.  John loves most of the things we're having this week, so it gives me more time next week for experimenting.  :)  It's also an easy week, full of recipes I'm mostly cooking from memory (except the hash... but how much direction does one really need for hash?!).  I'm hungry just thinking about it....

Sunday we're having potato soup.  I'm thinking of roasting some chicken pieces for him to have with it.  That's probably a good idea, because I can find several other uses for left over chicken.

Hi, Aleasa! Using liquid smoke is ok and that is how your recipe will turn out- OK. Get a stove top moker. They are anywhere from $15.00 for a sheet metal one to $60.00 for a cast iron one. The advantage is real smoke (for that bark) and you can get different wood chips for different meats. Your recipes will be great! You will no longer be John's cook- you'll be John's chef.

you also could use leftover ham in the potato soup!!
