Scrambled Egg Muffins

Quick,easy and extremely customizable! I recommend using muffin liners as the eggs were difficult to get out and the pan is a mess. Muffins were a hit with kids and hubby so I will certainly make again.

Broiled Lobster Tails

Perfect! based on other reviews, I cooked my 4oz tails for 6 minutes and they were perfect and delicious. I also followed the advise of others and cut the butter down, reserving the rest for a dipping sauce.

Pumpkin Soup

Amazingly flavorful! I added a dash of cayenne pepper and a 1/4 tsp of crushed red pepper. It gave a great kick to a delicious soup. I used canned pumpkin for ease and it didn't hurt the outcome at all.

Company Fruit Salad

Colette's Smoked Sausage Fritatta

Delicious and easy! The sour cream gave it a nice flavor and a great texture. The beauty is that you can add anything. My daughter is pescatarian so I skipped the sausage and used onion, spinach, zucchini, leftover salmon and feta cheese. I will be making this one again for sure.

Veggie Vegetarian Chili

I have already made this several times this winter. I have added vegetarian sausage or meat substitute. Everyone in the family will eat this and like it. I add extra spice because my family likes spicy. Great to put in the crock pot and let it cook all day. I experiment with the spices every time and it seems like it is always delicious.

Thai-Style Grapefruit and Prawn

I made this hot and it was really easy to make. I liked it but the rest of the family was not crazy about it and just picked out the shrimp. It was much better cold the next day. I like the mix of spicy and tart.

Crispy Barbequed Tofu Slices

With a newly vegetarian daughter, I am trying to find meals we can all eat. This is one for sure! My carnivorous son went back for seconds. I baked the tofu for 15 minutes then dipped and fried the pieces and then broiled them again with the extra bbq sauce brushed on. They came out crunchy and delicious. I will be making this again and often.

Ribbon Salad

this dessert looked very cool and was easy (though time consuming) but it had a minty flavor and I'm not sure where that came from. It also had kind of a chalky texture. I did this for a 4th of July gathering so I used blue raspberry and cherry flavored Jello. I may try this again because it looked SO cool.

Cranberry Sauce

I made it according to directions but it came out a little thick and too tart. If I try making it again I think I will add some spices and additional OJ or water. Very easy to make though!

Yummy Sweet Potato Casserole

Easy and delicious! I made it for Thanksgiving trial run with friends and it was a HUGE hit. I took the advise of others and baked the potatoes (4 large sweet potatoes baked for an hour). Then I squeezed them out of the skins and mixed the other stuff in. I added 1/2 tsp cinnamon and nutmeg and 1/4 tsp ginger and omitted the salt. I did not double the topping as others have suggested. I can see how people would like that because the topping delicious. However, by not doubling it, it was a pleasant surprise when you got a bite of the topping without being overly sweet. I will make again for sure!

Slow Cooker Stuffing

I love the fact that you can put it together and forget about it, especially around the holidays! I was making it with my son and he poured in the entire 4 1/2 broth which was way too much liquid. We added 3 cups more bread cubes and it was perfect. I did not do the 45min on high setting, I just cooked it for 4 hrs on low and it was great. This says it serves 16 but we served it with 11 people and it was gone!

Vegetarian Gravy

SUPER YUMMY!! I served it at dry run Thanksgiving dinner with friends and everyone LOVED it, meat eater or not. I added mushrooms when I sauted the onion and garlic. I did have to cook much longer as noted by another reader. I could not find the nutritional yeast so I made it without. I made 4x the recipe and substituted half of the oil for butter. Savory, flavorful and a huge hit!

Roast Pork

Delicious! This was a hit with the entire family. I doubled the sauce and made gravy out of it like many others on this site. Very juicy and flavorful. It made the entire house smell great and everyone was anxious to try it. It did require planning ahead, but it was worth it. Next time I will try the crock pot ideaa someone posted to make it even easier.
