Best Big, Fat, Chewy Chocolate Chip Cookie

These are fantastic - I think the secret to the chewy aspect is the lower temperature. I made 3 dozen out of this recipe, so mine were about half the recommended size. My only change - I used self-rising flour versus all-purpouse to give the cookies a little extra "fluff." Also, I added half a cup of coconut flakes as an additional add-in. Delish!

Fresh Mango Salsa

I served this salsa over blackened grilled snapper and couldn't get enough! I did make two slight changes: added 1 small can of pineapple tidbits and subbed black pepper for red pepper. I can not WAIT to make this again with the fish!

Spring Biscotti

This was my first batch of homemade biscotti and this recipe hit it out of the park! It's taking all my will-power not to scarf down the entire batch. A few notes: I used slivered almonds instead of pistachios (already had them and they are cheaper) and I doubled the amount of orange zest. Also, despite putting the dough in the fridge for over an hour it was still really sticky in the center and underside. Next time I won't even waste my time with this step and will just form the logs directly on the lined cookie sheet. All in all, superb recipe!

Tasty Baked Meatballs

These are the BEST meatballs I've ever had! I made the recipe as suggested. I used 90/10 ground sirloin and fresh shredded parmesan. I noticed some reviews complains of a mushy consistency so I baked my meatballs for closer to 40 minutes. They were crispy (not burnt) on the outside and moist (not mushy) on the inside. My husband is usually not a fan of meatballs but loved these. Also, my picky toddlers gobbled them up. The recipe yields 36 golf ball sized meatballs, but I got almost 60 golf-ball sized meatballs out of the recipe. I froze about 2 dozen to enjoy down the road. TRY THIS RECIPE - YOU WON'T BE DISAPPOINTED!

Cauliflower-Cheese Soup

This was a fantastic dish. We served it with pierogies on Christmas Eve, the whole family loved it. I did make a few changes: used vegitable broth instead of water, doubled the cauliflower and doubled the cheese. I will definitely be making this one again!
