About this Cook
I'm 28 years old. I teach 7th grade English/Language Arts. I love to cook and am constantly looking for new recipes. I haven't had anyone dislike my cooking so far. I also love to travel and spend time with my family and boyfriend (soon to be husband, hopefully). I recently started a new hobby; I'm beading jewelry.
My favorite things to cook
I'm Mexican, so of course I really enjoy cooking some of my abuela's recipes. I absolutely crave Italian food; it's one of my favorite foods to cook. I also enjoy using Rachael Ray recipes. I enjoy baking, but it comes second to cooking a gourmet meal. Because my boyfriend's not crazy about it, I don't cook Indian food, but it is one of my favorites as well.
My favorite family cooking traditions
Mi abuela's mexican rice is one of the best ever. She gets special requests for it. I have not been able to duplicate it yet, but I'm almost there. I love to make fideo, carne guisada, and arroz con pollo, just like abuela's.
My cooking triumphs
My old roommate gave me the best complement when he ate my caldo de pollo (chicken/vegetable soup)for the first time. "I wish I was a cow!" He explained that they have two stomachs. :) I also make an outstanding Paella, charro beans, BBQ Salmon, shrimp cocktail, carne guisada, a meal that consists of Thai Shrimp stir fry/Pina Colada jasmine rice/black beans, chicken pot pie,grilled tuna steak etc. The list goes on and on...
My cooking tragedies
I made Blackened Red Snapper and Mahi Mahi once that didn't turn out so great. My boyfriend hated my Indian food, and once I had an accident with pepper and ruined a chicken pot pie. I have made plenty of baking mistakes!

Get a Husband Brunswick Stew
Great! My 17 month old devoured it! I used already cooked chicken I had in the fridge. I also added kielbasa and green beans. No creamed corn, so I used frozen and a little milk. I used honey barbecue sauce as well.

Fluffy Pancakes
The best pancakes I have ever made! So fluffy and light! The taste was top notch. I mixed in fresh blackberries. Yummy!

Chuck's Favorite Mac and Cheese
Great dish! My whole family cleaned their plates and ate leftovers twice. Just as good as the first time. I added ham and peas. My husband is still talking about it. Next time I will add a little milk and more cheese. It needed a bit of moisture when reheated.
