My favorite family cooking traditions
Mom loved to cook with red wine! She always found a way to put it in, well, mostly everything. She made the most amazing spaghetti meat sauce with LOTS of wine. I will post it someday.

Gluten Free Red Velvet Cake
I made a dozen of these for my church's bake sale table at the holiday bazaar this weekend, and they were gobbled up in less than an hour! At least a half dozen people asked for the recipe. Nobody could believe they were gluten free! I made two small substitutions: I used safflower oil instead of canola oil, and I only had a cup of white sugar in my cupboard so one-half cup of the 1-1/2 cups of sugar was brown sugar. Otherwise, I followed the recipe as given. I will definitely be making this again in the near future!

Irish Soda Bread
This was absolutely PERFECT! I couldn't believe how moist and fluffy it turned out. I did a few substitutions: a cube of melted butter instead of the sour cream (suggested by M Unit in another review), and added 1 cup of golden raisins and 1 cup of currants which gave it an interesting look and flavor. The only problem I see with this is that eating only one piece is impossible. My diet is out the window with this bread, but it is a great side-dish bread for special occasions. Can't wait to make it again for St. Patrick's Day!

Baked Sweet Potatoes with Ginger and Honey
I don't know WHAT I did wrong, but this didn't turn out quite the way I thought it would. The only change I made was I put in 1 tbsp ground ginger instead of the fresh ginger. I baked it according to directions, and they came out pretty burnt (I mean, the burnt carmellized version). My oven might be not working correctly. It tasted just OK even though it was burnt, but all I tasted was the ginger. Next time (and my suggestion for y'all) is LESS ginger is better! I'll be belchin' ginger for days now. (((smiling)))
