Barbequed Ribs

Reviewed: Sep. 3, 2012
excepional! i almost followed the directions, but i hate ketchup, so i swicthed the amounts of ketchup and chili sauce. i also used elephant garlic instead of regular garlic. i did not cook sauce prior to making, i marinaded the baby backs all night in the sauce and then basted the ribs about every 5 minutes after baking covered at 325 degrees. raining here, so grill was out. a lot of trouble to make the sauce but i made it the day before and will save for next time. nothing on the market compares to the sauce. i bet it would be terrific on chicken! a great recipe. oops i baked @ 30 minutes covered and then started basting @ every 5 minutes

Marinated Grilled Shrimp

Reviewed: Jul. 27, 2012
ok, like this really needed another large thumbs up. that being said..it is what it is...5 stars! i used fresh heirloom maters, elephant garlic, shallots and variaged basil. added a pinch of salt and honey. it marinated @ 10 hours. i pan fried this until shrimp turned pink. maybe 20 miuntes started from a large cold pan, mh. raining like crazy outside, no grilling. i used large shrimp. an excellent recipe that can beadapted to personal tastes as long as you follow the the sweet/heat diameters. i used an immersion blender in a short -sided glass bowl...don't use a short-sided bowl, believe me :)

Addictive Sweet Potato Burritos

Reviewed: Jul. 6, 2012
truly exceptional! i followed others tips and used canned black beans. i am a wuss, so i cut down the chili powder and cumin to half. i threw everything in a large pot and pulsed the mixture until semi-smooth. it was served with lettuce and fresh tomatos on top. i let the wife taste the mixture and she hung around the stove,"' when is it gonna be done?"...my highest compliement from her. i know the ingredients sound crazy together, but having a wife who will not eat meat on fridays i'm always looking for something like this. there is going to be 6 left over. gonna be wrapped in alumiun foil and saved for a rainy day. karena hit one out of the park here! GIVE THIS A SHOT. no suger, salt or butter added. i did use pam to grease the casserole dishes.

yes, this is a quick meal made with can soups. and yes, some folks will say this is not a recipe...who cares! i loved a quick easy tasty meal for a busy friday night...wife doesn't eat meat on fridays. i added a baked potato and maybe 2 ts butter. it certainly wasn't home-made, but it filled the hole in our bellies! i just added ground black pepper...very good stuff with a salad.

i gotta give this 5 stars, because i HATE cilantro ( tastes like soap to me.) but i did some minor changes to the recipe...i used half the fresh cilantro called for. it tasted like a fancy ranch dressing to me. i do hate cilantro, but this, after a cilantro challenge was issued...yep it's dang good!

it seems so many folks love this...and yes it is good. my problem is it calls for too much water. i made as written...too watery for my taste. halve the water and it would be better. i won't waste shrimp again here, though.
