Tangy Potato, Green Bean and Bacon Salad

I followed the directions. I had one bite before wrapping up for easter dinner tomorrow. my moose came home and found it...she ate it all. so according to my moose's stomach and just one taste from me...5 stars. hide this better then I did.

Chef John's Salmon in Parchment

I don't like red-meat fish. this looked easy and the wife loves salmon, so I made this. I did add some diced zukes and halved some cherry tomatos. added fresh dill to fish, oregano to maters, and rosemary to taters. sprinkled more evoo and salt / pepper. I ate all of mine...a huge plate. this is a keeper!

Chicken Zoodle Soup

i probably should not rate this since i changed it. i didn't mean to, but i doubled the recipe. i used celery and included the tops...added them after the soup had simmered. i used a roto bird from sam's. shredded the meat. slapped the bones and skin in a cast-iron pot. this simmered @ 3 hours after a reducing boil. strained out the bones ans used the stock. i then used butter and olive oil to sauté the garlic, onions, and carrots. i added some reserved chicken stock when needed. this is a great cooler weather chicken noodle soup. i love the zoodles in this. i bet some fresh maters would be great here. great stuff! the zukes are terrific here. try this..your flu needs this!

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

I made this as written. it was delicious. served with oven-roasted parm. asparagus over butter egg noodles and a salad. love the maters in this. I can't wait until I can use fresh basil.

Crab Fritters

changes---low fat mayo and low fat sour cream. doubled the horseradish, used 1 teaspoon crushed garlic and doubled the lemon. this combo got our noses running. we managed to catch 'em, but I will scale back next time. I rolled the crab mixture into balls then flatten 'em after browning on one side. these make PLENTY! so be careful if you want a dinner for 2. I halved the recipe and there was @ 18 nice 'uns. don't get me wrong this is a GREAT recipe. I used zatarians hush-puppy mix. oops, sauted scallions before adding to batter. this is really good stuff! I don't understand why more folks haven't tried this....

Fish Tacos

I tweaked this a hair. I used fresh-caught bass filets cut into strips. I used a whole diced, seeded jalapeno, not capers (none at hand.) I fried some bacon, reserved the bacon. added olive oil and butter, fresh diced garlic and sweet onion . that was added to white sauce. mixed the bacon, garlic and onion back to white sauce. yeah, this is excellent. next time ( and there will be a next time ) I would chill the batter, add more jalapeno and lime juice and fry the fish ahead, so prep would be quicker. excellent recipe..white sauce rocks!

Greek Pizza with Spinach, Feta and Olives

ok, I'm the first to admit I changed this and maybe I should not rate this, but the recipe was followed as per grocery store finds and what was on hand. I used flat-bread, sub. the mayo for butter then proceeded with the rest of prep. I added diced portabella mushrooms and red bell peppers. these freeze great and make a great snack for meatless Fridays. great recipe!

Bada Bing Pork Chops

I tried this with cut 1 inch pork loin chops. I marinated this for a full day. I love weird sounding marinades. applesauce and Italian dressing...really, ok! I noted my small changes, besides pan-frying the chops. I used home-made pepper sauce and everything else according to recipe. I also made cheddar sweet potatos and apples. it was EXCELLENT! thanks for posting a great idea!

Green Bean Casserole II

made as written. I wanted a time tested recipe that was easy. this was not it. I knew I should have used fresh green beans, make a roux, fresh bell peppers and onions add some extra sharp cheese. I got lazy. well, my fault...I knew better, but champagne was flowing and I wanted out of the kitchen.

Jimmy Dean Sausage Cheese Balls

made as written. I mixed the sausage and bisquit with the finely chopped celery and onion first. that took maybe 10 minutes, but it all came together finally. then added the cheese. I rolled the balls as big as large walnuts. I used parchment paper. they took @ 30 minutes to brown. they were a hit. this recipe will be made many more times!

Chile Chicken Chili

this is excellent! i left out the cayenne powder, chili powder and cumin. i use mile rotel tomatos and canned corn. after picking over a roto bird for 1 dinner, i shredded the rest of the bird into a large cast iron stock-pot. the slowcooker is not needed here. i used fresh red bell-pepper. this is BETTER the next day. i made some sweet cornbread and a salad. excellent stuff!!

Shrimply Delicious Shrimp Salad

this is a great starter recipe. yep, it needs some giddy-up. i added a half of a lemon squeezed, eye-balled some dried dill. maybe a tea-spoon, reduced mayo to 1/4 cup and added 1/4 sour-cream, added some cajun sauce to taste. left the salt on the side-line and added fresh ground pepper. i gnawed this with ritz crackers. great appetizers, especially in summer.

Creamy White Chili

i made changes...nothing drastic. i mashed one of the cans of great beans, i used almost a whole left-over roto chicken, only i can of the green chilies, sauted about a third of a cup sweet red bell pepper, a can with the liquid of sweet whole kernel white corn and then eye-balled the chicken stock needed to keep it from sticking while bringing it to a boil. left it on low after the boil for @ an hour. it was delicious. i added the sour cream and heavy cream to the indiviual bowls. i preferred it without the cream. excellent use for simple left-overs. i bet it would freeze excellent without the sour and heavy cream, which could be added after defrosting.

this is another review after now making it twice. changes--i doubled the horseradish, squeezed half a large lemon for juice and then left it in the refrigerator about 4 hours. better,for us. goes great with fried catfish :)

Crab Quiche I

this was very good. i did use greek yogurt instead of mayo, half and half instead of milk. i made 2 quiches at the same time. i did add more swiss cheese 10 minutes until done. i had found 16oz. can claw crab on sale. i will add hot sauce, garlic and sauted red bell-pepper next time.i baked for about 75 minutes, turned off the oven and let it set up. there will be a next time.

Wedding Gift Spaghetti Sauce

this was very good. i used sweet italian sausage. i added the vidalia onion and yellow bellpepper and a couple stalks celery to the meat along with a large shallot. i used fresh herbs. after straining, the mixture simmered @ 6 hrs. i made the full recipe, even though there are only 2 of us ( i do cook for an elderly in-law.) ma-n-law loved it. i have some monster sweet banana peppers in the garden...yep, stuffed peppers and lasanga in our future. make all the sauce, you'll be glad you did.

Hasselback Potatoes

i made minor changes. i used a very large colorado baking potato, skin on. i just trusted myself and didn't go thru the spoon hassle :). i used more butter and grated parm cheese on top. it really looked like a roasted loaf of seeded bread. beautiful presentation and wife loved it, me too.

Oyster Sauce Chicken

the wife said it smelled funny(?), i thought it smelled great. i used another reviewer's suggestions and mixed 2 parts oyster sauce with 1 part sweet garlic chili sauce. removed the skins and drained the fat off at 25 minutes. i used bone-in thighs salted and pepperd. made parm-egg noodles and a salad. very good stuff.
