more like a 2 and a half stars recipe. I followed the directions exactly! boiling the fish then broiling the fish...and it will magically taste like lobster? nope! I will not make this again. the texture was good, surprisingly.

Asian Marinated Asparagus

Reviewed: May 18, 2015
this is what happened after I made it according to directions and allowing it to marinade @5 hours. my wife had to wolf down 5 just to ,"make sure it's spiced correctly." I loved watching her, lol. I do believe it does need more vinegar and more heat. dang fine recipe as is!

I made this today for easter tomorrow. I used fresh scallions and backyard wild onion greens. I also used baby Yukon golds and baby red potatos. I doubled the recipe, after hearing from both daughters that they WERE coming. I'm waiting on this to cool off before I put it away for tomorrow...ok, actually I can't keep a fork out of it :)

Pinto Beans With Mexican-Style Seasonings

Reviewed: Mar. 28, 2015
I changed this significantly. I still gave this a 5 star rating. I made this as written 1st time. I've since made this 4-5 times in 3 months. I leave out--cilantro,cumin, salt, bacon and chili powder. yep, this is a totally different recipe now., soak pintos over night. drain strain use low sodium chicken stock , sweet onion, plenty of fresh ground pepper and butter to taste. simmer until you can't wait any longer. drain again. add rotel mild maters and chilis, a small can of hatch chilis, add velvetta Mexican cheese, pepperjack cheese and mozz cheese. use an immersion blender and pulse it to your desire . sour cream and red bell pepper cornbread and cow-juice will fill a hungry stomach with a nice meal.

Roasted Sweet Potatoes and Vegetables With Thyme and Maple Syrup

Reviewed: Mar. 10, 2015
awesome simple recipe. we had never eaten parsnips ( I thought they were albino carrots.) also, I'm not a big fan of maple syrup. we happened to have some the wife had bought up north. I doubled the recipe to have left-overs, dang it...I should have tripled it. no left-overs. seriously thinking of planting parsnips here. thanks for a great dinner with a favorite new (to us) vegetable.

Tomato Zucchini Squash Skillet

Reviewed: Mar. 4, 2015
I didn't have yellow squash, left it out. I used a mixture of olive oil and butter. I added a large clove of minced shallot to the vidilia onion. I added a dusting of panko and parm cheese. even with mostly hot house grown maters and zukes it was very good. served with dill pickle meatloaf and mac and cheese. when our garden comes in, I'll be sure to trot this easy recipe out again.

Crab and Shrimp Delight

Reviewed: Feb. 13, 2015
the wife wanted crab and shrimp quiche. I cook, my choice. made this and actually almost followed the recipe. changes-- seriously sharp cheese from cabot, 1/2 and 1/2 for cow juice sub, imitation crab, subbed half low fat mayo and low fat sour cream for the mayo, and added English peas. I did add old bays and green tobacco sauce. I tried this first as written, it was good but bland, these changes suited our taste, I'm sure folks are gonna love this as written! oops, I did break up the angel hair pasta and added it. it was fine. update...I did boil the pasta @ 4 minutes, much better. the wife said this is one of the best things she has ever eaten.
