we have spent 2 plus years remodeling our home...( well we still have an office and full bath to do.)  I know I will NEVER go thru that hassle again...by accident or choice! when you put hardwood down  and paint EVERYTHING upstairs, stuff must be moved. that's the part I hate. you will too.… MORE

i enjoy cooking. the wife considers it a chore. i hate yard work. she loves it. we mesh. i love bass fishing, reading, music, baseball, college football and my family.

holidays are a big deal! christmas is my time to shine. i try to add a new recipe each year, but the family demands pretty much the same menu. kinda frustrating!
My cooking triumphs
i cared for my mother in law about 3 months when she had shattered her shoulder. i didn't work, so money was tight. we survived on only wife's paycheck during that time. ma-n-law had diet restrictions. it was difficult to make cheap, nutritious meals everyone would eat. we prospered as a family and learned alot about each other's strenghths and weaknesses.
My cooking tragedies
a stove top fire. i explained that one already. the grill falling over was another one...oops grill season is here! i love the tragedies...those are the ones that i'll always remember!

Tomato Zucchini Squash Skillet
I didn't have yellow squash, left it out. I used a mixture of olive oil and butter. I added a large clove of minced shallot to the vidilia onion. I added a dusting of panko and parm cheese. even with mostly hot house grown maters and zukes it was very good. served with dill pickle meatloaf and mac and cheese. when our garden comes in, I'll be sure to trot this easy recipe out again.

Garlic-Sauteed Asparagus
spot on directions, a nice change from the parm or lemon asparagus recipes. served with shrimp and crab delight from this site. good stuff.

Crab and Shrimp Delight
the wife wanted crab and shrimp quiche. I cook, my choice. made this and actually almost followed the recipe. changes-- seriously sharp cheese from cabot, 1/2 and 1/2 for cow juice sub, imitation crab, subbed half low fat mayo and low fat sour cream for the mayo, and added English peas. I did add old bays and green tobacco sauce. I tried this first as written, it was good but bland, these changes suited our taste, I'm sure folks are gonna love this as written! oops, I did break up the angel hair pasta and added it. it was fine. update...I did boil the pasta @ 4 minutes, much better. the wife said this is one of the best things she has ever eaten.
