About this Cook
I have a husband for almost 2 years, two sons (a 2 y/o and 11 y/o). Both my sons are VERY PICKY. what they want to eat changes day by day.
My favorite things to cook
i love to try new thing, or throw a bunch of stuff together and watch it turn out very yummy. I have been getting into baking a little more recently, and I am getting much better. i do enjoy salt in my food, but it has to be just a touch. Otherwise, I swell up terribly, almost right away.
My favorite family cooking traditions
Christmas and Easter, we cook at our house or go to my mom's. Who ever is the hostest makes the meat, and potatoes. The people coming over bring salads and sweets. its relaxing.
My cooking triumphs
I threw together a can of rotel, 1 chopped onion, some garlic and slow cooked in a pan some cheap petite mock chuck filets, and they actually were good! Also, finally learning that when the cookie looks like it is not done, IT IS. I also finally mastered a great french onion soup recipe found on this site, i just added and substracted to make it my way. It was WONDERFUL.
My cooking tragedies
i have made 100s of cookies and up until the last two months, they were always hard as a brick. Always! I also have a hard time judging how much food I need to cook. I usually end up with twice as much as I will need.

Dijon Chicken
This was a good recipe. I didn't use salt. I used 1 tablespoon lemon garlic seasoning instead (salt in it), simmered it right in the sauce. I upped the amount of everything in the sauce so we would have extra. I poked the chicken a few times and let it sit in the sauce before dipping it in the bread crumbs. I ran the bread crumbs through a mini food processer so they were super fine. I used about 1 cup total. It was really good.

Fluffy French Toast
I have made this twice now. LOVE IT. I add 1 vanilla bean to the batter and i also add 1/4 cup half&half OR 1/4 cup heavy whip to 3/4 cup 2% milk - just a personal preference. Perfect as is! My husband, and two (picky) sons loved it. thanks!

Slow Cooker Split Pea Sausage Soup
Excellent split pea soup. I used 4 cups chicken broth, 4.5 cups water, and 3 bouillon cubes. I used fresh garlic rather than powder. I found it was a little watery (for my taste) at the 4th hour, so I added a bit of cornstarch (about 2 tablespoons in cold water), and it turned out great. Thanks a lot!
