Pumpkin Bars III

As others have said, I expected bars but found it was a cake. That is no matter to me because it is the moistest cake I've ever had!! This is one of my favorite recipes ever. My husband, who doesn't like pumpkin pie, loves this cake more than any other cake. We prefer this recipe using only cinnamon instead of other recipes that add nutmeg and allspice. My husband took some to work and his co-workers fipped over it. One owns a bed and breakfast and wanted the recipe to start serving to his guests. I made this for Thanksgiving and everyone loved it. The cream cheese icing gives a nice tang. This summer, I served with fresh blueberries on top. You will not be disappointed! Now if I could only find a chocolate cake recipe as moist as this one...

Three Melon Smoothie

I made this with watermelon and pink honeydew. I didn't have lemon-lime soda so I squeezed 1/2 fresh lime in and added 1 tsp. sugar. I'm sure the carbonation of the soda would add a nice sparkle. I will definitely make again and add the cantaloupe next time. Thx. Bishop!

Easy Blueberry-Lemon Parfait

Cool and refreshing. I used Yoplait original blueberry acai yogurt instead of lemon yogurt but I would like to try it that way next! I also used graham cracker crumbs. A very nice quick and healthy snack. I enjoy all recipes that make use of the abundance of South Jersey blueberries we have in July!

PHILADELPHIA® Fruit Pizza

I love philly fruit pizza! I made mine with Pillsbury Pet Ritz pie crust, flattened down on a pizza stone. Then I used 1/3 less fat philly cream cheese to make a bit healthier. Jersey peaches and blueberries with mandarin oranges...it looks like an orange flower!

Easy Summer Pie

With Pet Ritz pie crust, this came out great. I have made this with the sugar cookie dough but I had one Pet Ritz 9" pie crust in the freezer and wanted to use it. So I let it thaw, pressed it flat on my pizza stone and baked it. I only needed to use 3/4 of the Philly cream cheese because the pie was small. I also added 1/2 tsp. vanilla flavoring. I covered it with local strawberries, blueberries and peaches and then glazed with apricot jam thinned with a smidge of water. It came out great. (See my photos under Apricot20) I think I like this better than the sugar cookie dough! I gave it 4 stars but with a fruit glaze, it becomes 5 stars in my book. The pie crust, after baking and refrigeration, tasted like Christmas butter cookie dough and the decorative edging gave it a finished look. Thanks for this recipe. It IS fun, summery, and easy. A keeper for me!

Caramel Turtle Brownies

I am a chocolate lover and I thought these sounded good on paper. I used Duncan Hines Dark Chocolate Fudge cake mix. I've baked Duncan Hines cake before and it is nice and moist...but this recipe, where you add the dry mix to evaporated milk and butter, made a really weird texture to the 'cake'. I agree with other cooks, it's neither cake-like nor brownie. I'm sorry, but I think it is really bad, I do not recommend it.

Goat Cheese and Arugula over Penne

Goat cheese has a marvelous tang. I enjoyed this dish but I may have it without the cheese next time...just to make for lighter fare in summer. I diced the plum tomatoes and let them 'rest' in a bowl with one garlic clove, chopped in half and olive oil. Then after an hour I simmered everything. I added fresh basil and dropped in a bag of arugula/baby spinach toward the end. I let that wilt down, about 10 minutes and then tossed immediately with the penne. My grown daughter loved it.

Colcannon, where have you been all my life? I made beef stew for St. Paddy's Day and left out the potatoes so I could try this. I saute'ed the cabbage w/onion in olive oil/butter because I forgot about the bacon drippings...a bit healthier I guess. Sooo good. We poured beef stew over this, then dropped a spoon of sour cream over top. My husband is Italian (usually doesn't like Irish food)and he loved it!

Jewish Coffee Cake

Very nice and moist. I used half white flour and half whole wheat flour and half white sugar and half brown sugar so the color was like honey. You could not taste the wheat at all! I only had 3/4 cup of sour cream so I added a little heavy cream and milk for moisture. It was difficult to spread(almost like a bread dough) but since it rose nicely and everyone loved it, I will have to make this again.
