My favorite things to cook
Mexican! My husband especially appreciates any of my mexi-cali dishes. I like baking as well. I LOVE to cook potatoes.
My favorite family cooking traditions
Comfort foods Mexican-American style: Papas con carne moleda, chile verde tacos, enchilada casserole, avocado and hotdog tacos (It's an acquired taste). Oh and I learned from my mom to put mayonnaise on almost every starch and a few veggies.
My cooking triumphs
A beautiful, juicy, rib roast (finally!). Goat-cheese and sage whole-roasted chicken. Caramel calvados apple upside-down cake. Sweet Potato-Pie. Many, many different types of cookies.
My cooking tragedies
My mom never taught me any 'traditional' mexican recipes. So most of my first attempts were flops. But as time wore on, and my husband as taste-tester, my cooking skills have blossomed.

Baked Macaroni and Cheese I
This was good. It's not the cheesiest, it's more like a casserole, and quite heavy for a meal. Still in small portions its good.

Easy Pesto
This was very simple, and convenient and the taste was pretty good. A good everyday sort of recipe. I needed to find a pesto sauce w/o parmesan, since I didn't have any on hand. However it was missed. If you find it kinda bland, add a tsp of lemon juice, that helped.

Hummus III
This is good both with and without the tahini. But if you like hummus like I do, the 8 serving recipe is really only two!
