BLT Dip

Just a thought to those who found it runny. What about adding sundried tomatoes instead of fresh? I dehydrate my own tomatoes.

Buckeyes I

These were good if you like REALLY sweet. Two suggestions that I will try the next time I make these. #1 - substitute 1 cup unsweetened cocoa for 1 cup confectioners sugar & # 2 use unsweetened or perhaps bitter chocolate to coat these. If using bitter chocolate, let chocolate set & then sprinkle with icing sugar. This will make them look pretty too. I tossed all ingedients in my Kitchenaid and it turned out great.

Unbelievable Spinach Calzones

I have made these at least 30 times with a few additions to the filling. I add 10 button mushrooms and cook then dice 3 chicken breasts. I place all the ingredients into my food processor and pulse it for about a minute. It ends up being a double batch, but I make 2 batches of pizza dough from my bread machine and after baking it all, I toss the leftovers into the freezer for another meal. I control how big I want them to be. I once served them as an appetizer, making them really small (although somewhat tedious) but everyone raved. My hubby likes these served with pizza sauce, my kids prefer ranch dressing. REALLY YUMMY!

Pesto Cream Sauce

I love this recipe. I used the pesto sauce recipe subitted by sal on this site for the "1 cup prepared pesto", using the serving for 4 instead of 16 on that recipe. I also included in this one a 10 oz. pk of frozen spinach thawed, red pepper instead of the tomatoes and cubed chicken instead of shrimp, as I an allergic. I served this with penne noodles and it was fantastic.

Greek Style Potatoes

When I first made this recipe I thought I had potato soup in my casserole dish. However, I stuck to it and like another reviewer, and after 75 min., I took the cover off with 15 min. to go and these were AWESOME !! perfect and a nice change from regular roasted potatoes. The second time I made these I cut up an onion and mixed it in. This was was really tasty also.

Crispy Fish

My hubby takes over in the kitchen whenever we have fish for dinner. He found this recipe and made a few changes. He sub'd steak spice for the cayenne pepper, we only had regular shortening in the house and he preferred to dip the fish in egg before putting into the potato coating. Doing it this way gave the coating a more golden look. This was a very tasty way to do the fish and my kids inhaled all of it. Thank you for this recipe!

Fiesta Chicken and Rice Bake

This recipe is sooooo easy. I don't precook the rice, but I do add and extra 1/2 cup of water before tossing it in the oven. I dice the chicken, double the rice, and also add a chopped onion and a sweet red pepper, just for colour. I've also played with the cheese blend, using whatever I have in the fridge. All this fits nicely into a 9 x 13 pan covered with foil. VERY EASY recipe. Thanks

Cheddar Cabbage Casserole

This is a great recipe with only a few slight changes. I skip the butter and put all the cornflakes on top. I sub the mayo for sour cream. I use cream of mushroom soup, and I put in 2 cups of cut up breakfast sausage with 1/2 a cup of onion and 2 grated carrots. Everyone in our family cleans this up!! I have also used cheddar and monterey jack as well as cheddar and havarti on top. REALLY YUMMY!

Roast Beef and Cheese Roll Ups

I used cottage cheese instead of the ricotta, I bought garlic roast beef so the addition of the galic powder made it taste too salty (my fault). Filling would not stay in the rolls, so rather than give up I converted this dish to a lasagna and layered it in a loaf pan and everyone enjoyed.

Pretty Chicken Marinade

Used this as a marinade for pork kabobs. This was fabulous. Put cut meat and marinade into zip-bag and left in the fridge for 2 days. Did not use liquid smoke, as we don't care for it, and the meat was so tender!! REALLY yummy stuff, and cheaper than the store bought salad dressing I used to use. Thanks for the recipe.

Crunchy Rice Casserole

This was a good recipe, but I wouldn't split the meat into 2 dishes, or it seems to sparing for a dinner for 4, and WAY too much rice. I added a can of kernel corn to this and we enjoyed it very much.

Roasted Garlic Bean Dip

I attempted this twice. The first I did half roasted and half minced garlic. Soaked my own beans and it still was lacking. Second attempt I added extra rosemary and cumin and roasted 7 heads of garlic and it was still bland. I hate to sound so negative, but I LOVE garlic and hate to waste it on such a tasteless dish.
