Amazing Calavacita and Pork

Recipe was ok. I did think it would be too bland and added some garlic powder, fajita seasoning and some potatoes. I found the zucchini did go a bit mushy so I think i may cook it a little less. I did cook the poatoes with the pork.

Tasty Tortilla Roll-ups

Made a few adjustments... I added a little bit of thin ham which was chopped up, added some fajita seasoning, garlic powder and a bit of shredded cheese. Made as a movie snack for DH ne next to never offers a 5 for the next best is 4. Very easy and quick to make.

Feta Shrimp Pasta

Nice quick and easy recipe. I used wholemeal pasta(40g penne pasta instead), and 2 tsp low fat margarine instead of butter. I also used spring onions ( scallons in the US) in place of onions. I used precooked prawns from the freezer and just defrosted them in minutes. It is a very easy recipe to make when in a rush ( I used 42g of feta as well as 113g of prawns). The liquid from the prawns helps to make the sauce which is great as an alternative to red sauce. Even my 3 year old loved it. This was just enough for 1 person as I wasn't feeding many. Next time I will add from chopped garlic and maybe a bit of fresh parsley.

Feta and Olive Meatballs

This was lovely. I only made enough for 2 people. And I added a tbs of tomato puree and garlic puree and blitzed them in the blender to mix then better. I used 250g of extra lean beef mince and fresh basil, parsley, and oregano. It was nice. I served it on a bed of baby spinach,rocket, and watercress. Very healthy meal. Loved it. Even my 3 y.o loved them.

Florida Strawberry Muffins

3 year old didn't care too much for this...but then my neighbours ( who were only too happy to get some treats) Loved them. I did as per other reviewers and added 1/4 tsp cinnammon and 1/4 tsp nutmeg as well as a large ripe banana and I substituted 1/2 white sugar with 1/2 cup brown when mxing with the butter. Very moist.

Hummus I

Made 1/2 recipes as this was too much for just us.this but did add extra water, olive oil and cumin to the mix as other reviews have suggested. DH loved it, which is a shock as he doesn't really eat this kind of stuff. 3 year old not so keen but it was a good try. =-)

Stuffed Fish in Puff Pastry

This was a good recipe. But I too found the stuffing a bit bland. I added 1/2 tsp dill, 1/4c parm cheese to the mix. I also both peppered and salted the fish. I didn't have flounder so I used small rainbow trouts that were boned. I filled the fish with the stuffing and then put garlic and herb philly on the top of the fish before the pastry. It tasted and looked lovely. I am not too big of a fan of vermouth and maybe next time would use a bit less. And I didn't use any hot sauce, I am not a fan.

Easy Beef Strogonoff

I found this recipe excellent. I have a hard time getting my husband to have anything with sour creamin it but he loved it. I must say the cooking time is way off. I am a quick and efficient cook and it took me half and hour. I used 1 1/2 pounds of beef and 250 g of Bow pasta as they don't sell egg noodle in england. I love this recipe and will be making it a bit more often.

Antojitos Minis

I loved this recipe, my husband thought it was ok. However I made a few changes, but it seems it was the browning of the tortillas and the lack of a lot of cheese that was the problem. I used The Monterey jack,as my first layer, then added refried beans,taco meat,onions,some chopped olives and a little more cheddar cheese on top. For my husbands it was the same excepted there were no olives,but jalapeños instead and some Tabasco sauce. Also on top once cooked I added some sour cream and fresh avocados. I would also suggest to cut the tortillas in triangles as they make perfect cups. I would have these again, maybe try a little more cheese or even Mexican cheese for extra taste.

Dill, Feta and Garlic Cream Cheese Spread

very nice and super quick. I did make it a bit more healthy though. I used Light feta cheese(66g), as well as 70% reduced fat cream cheese( 125g). I was only making it for 4, so I used the above. I did use about 1 tsp of minced garlic and the full 1.5 tsp of dill. I served with with carrot/bell pepper/and cucumber sticks.

Avocado Steak

Great recipe, but changed a few things. Firstly I used frozen Quorn pieces(vegi alternative) instead of steak. I didn't use any oil,to make it healthier and once I cooked the red onions I used I put the pieces in to take on the flavour as well as eye balling some fajita seasoning.I heated up the beans and added some garlic and cumin powder to them as well as some low fat cheese one they were warmed through. In addition I added a little water to the beans so they weren't so thick. I also used a packet of microwave frozen white rice to save time ( heats in 3 minutes while you cook everything else. Then I layed it all. Placing the cubed avocados on top. Very yummy dish. Since it was only for me...I scaled things down. Will definately make it again. As I am on a diet-slimming world, this is perfect as there is very little in the way of fats (apart from the avocado of course and the low fat cheese). Will definately make it again!!

Cake Mix Cookies VIII

Nice and easy cookies.Great activity with the kids. I used mine as cookie sandwiches and followed the information of a previous review and used oil instead of butter. One thing I would say is to sift the cake mix as it is hard to get the lumps out. But other than that...will definatly make this again!!

Chive-Mushroom Spinach Salad

Well it was ok. My husband thought it was nice, but to be honest, whiolse I love all the ingredients, it just wasn't my cup of tea. It was a bit lacking. I also added some crispy bacon to the top of the salad as my husband thought it lacked a bit of "meat". So it isn't bad, but I won't run out and make it again.

Old-Fashioned Lemonade

Great and fast recipe. I added a small punnet of raspberries, siving out all the seeds, and an extra 1/8 cup sugar, which made an excellent raspberry lemonade!! Great on sunny days!!

Banana Chocolate Chip Cookies

It was ok. Very cake like. I changed the recipe & made more of a Caribbean cookie. I.e I added 60g coconut, 3/4 cup chopped walnuts, all brown sugar and increased it by 40g. I also added 2 tbsp of pineapple juice and no vanilla. Also cooked at 180c and not 200c that was way too hot. And used only 100g chocolate chips. Great banana flavour but they are more like muffin tops rather than cookies. But the based recipe itself is good.

Mock Tuna Salad

eh it was ok, by no means fantastic, but edible. I had to add more mayo, plus garlic powder and cumin to make it taste of something. If that isn't your thing, I would add more relish. It was a rather dry and tasteless mix.But would make good dip with a nice flavour crisps or tortilla chips.

Corn Dogs

Quite a good recipe, a little sweet for me but still works. I did as some of the other reviewers have suggested and only used 3/4 cup milk, i think it were any more watery it wouldn't stick. I also dredged my items in cornstarch first ( or cornflour in the UK) I cooked my stuff in the deep fryer at 190c. I also tried it with cheddar cheese and processed cheese in place of the hotdog. DH never had one before and loved them,reminded me of the cheese on a stick stand. Only down side is even with the cornflour it was hard to get the batter to stick so be careful. I also dipped the dogs in and held on to them for 30 seconds before I dropped them so they wouldn't stick to the basket. Good luch and enjoy. p.s It was a little sweet for me, so next time I will half the sugar. Will make it again though.

Broccoli, Corn, and Green Bean Saute

Loved it.Didn't however add the herbs as my 3 year old isn't too keenon them. And to be honest I look at the recipe, the ingredients and just did my own thing.But we loved it. I used a little more feta, and less butter. I also used fresh steamed broccoli, canned beans ( as I am not over keen on them in the "fresh" form) and the corn only. I also added a clove of garlic to the butter before adding the veg. Will definatly make it again. Just again cutting down on the butter. Had this with garlic chicken which you could easily just add chopped to the dish.

Shepherd's Pie VI

Excellent and quick meal.I too made healthier changes to the recipe, to cater to my Slimming world diet.I used 2 white & 2 medium sweet potatoes, Low fat cheese, 2x small individual microwave steammix veg packs. I didn't use beef and used a meat substitue ( quorn-350g). I only used 1/8 cup of wocester, as I thought it would need help on the taste. 2 tbs of ketchup, and 1cup of gravy. I also didn't use the oil to cook the onion and the 2 cloves of chopped garlic I added, I used a low calorie cooking spray ( fry light in the UK) I made the recipe as instructed, but insted of adding butter I used a low fat margarine, and all the cheese, as i am always fearful of the top catching. But it was lovely. Very colourful and flavourful. I put the food in three individual remkin dishes so I can pull them out as I want them without having the full lot of food.Great recipe.

Restaurant-Style Buffalo Chicken Wings

DH loved these. I cooked them in an airgrill rather than deep fried, but he never comlpained. Did as recipe suggested. Only added a few chili flakes to the hot sauce itself. Cooked them in the flour and added flour before cooking as well as a few sprays of oil. Cooked until 3/4 done...then coated in the sauce.....( leaving some to remain) and cooked them for a further 15 minutes. And poured the remaining sauce over chicken when it was done just before serving.
