Baked Honey Mustard Chicken

Didn't realize we'd tried this back in 2001 & rated it 4 stars, but now we think it is worth 5 stars. Have no idea why we got rid of this recipe before as we sure will be having this more often now. This is quick & easy which I always like. Chicken was moist, but depending on thickness of the breast will determine the cooking time more than what the directions say.

Orange Cake

I've tried several times. We use vanilla pudding & orange extract. Next time I'm going to add some orange zest. When making the drizzle I make less because you don't need it all.

Cheesy Spinach Lasagna

GREAT, we will make again. I want to use more spinach & add some type of mushroom. Somewhere I'm going to also take other suggestion & try crabmeat. Making a lasagna without meat took awhile to really accept it; we must keep an open mind & try new things.

Catfish Jambalaya

TO DIE FOR!!!!!! We used instant rice so only used 2c chicken broth. My husband wants our Thanksgiving dinner to be "southern" now by doing this recipe again, creamy coleslaw, my homemade pecan pie & cornbread. This is better than what I've had at "cajun" style restaurants where we live.

Cranberry Upside-Down Coffee Cake

Oh sooooooooo good!!! & very light when warm. We added more cranberries, but will add even more the next time. We didn't have a springform pan so used a 10" deep dish pie pan & sprayed it so the cake wouldn't stick.

Pork Tenderloin with Dijon Marsala Sauce

WOW!!! I had to adapt because I only had honey dijon mustard & used butter & milk for the heavy cream that I didn't have. We added mushrooms also & this is a keeper. Very rich, but it was like eating at a fancy restaurant.

California Style Israeli Salad

Thank Haven for the produce guy because I had no idea what the difference was between a English cucumber & a regular one, much less what a jicama was. I was skeptical about the jicama, but I'm going to be looking for more recipes with it. This is a keeper, but I'd refrigerate several hours before serving because it tastes better & the flavors can blend.

Roast Sticky Chicken-Rotisserie Style

A great way to roast a chicken that you can make a sauce with the drippings. I used only 1 tsp of salt & will only bake approx 50 min per pound next time. A keeper of a recipe.

Chicken Cordon Bleu I

I took the suggestions & added garlic & onion powder. Next time to save frustration, I'm going to just put the cheese , spice & ham between 2 chicken breasts & tie together because the pounding & rolling wasn't that easy for me.

Chicken Tortilla Soup II

Loved this. I need to make a whole recipe next time so I can have some leftovers. I fried the corn tortillas & added just before serving. May try adding the corn & chili peppers as suggested also. I didn't use the salt because we don't use much salt.

Excellent & easy. I used frozen corn & chicken broth instead of the beer. Since I would like to see more juice, I may try putting some diced tomatoes or more chicken broth in next time.

Fish Chowder

Made some changes since we don't live where you can get good "fresh" fish. I didn't use the clam juice this time or the evaporated milk since I didn't have any on hand. I replaced with regular milk. Next time I'll use more mushrooms & Old Bay Seasoning. We think if you could use fresh fish from the coasts it would be fantastic.
