Grilled Peaches with Gingersnaps

Easy. Used vanilla ice cream, but would be more refreshing if using frozen yogurt. Still would like to try with vanilla bean ice cream. Only change I'll make next time is using more ginersnaps. I think that is what makes this dessert. Would recommend that if using ice cream, to use less brown sugar since ice cream is sweeter.

Nitey Night Cookies

Easy & no mess. I used mini choc chips which worked real well. I used less sugar & may try only a 1/2 c next time. Took others suggestion to preheat oven hotter.

Spiced Sweet Potatoes

This is something I won't do often just because it is so sweet, but do love the sauce. I'm going to try the sauce on pork loin or chicken because it is so good. When using this with the sweet potatoes, I'm going to cut the sauce in half.

Hubby said a 5 star, but I'm not sure. My problem is getting passed the meatballs in a soup. This is a hearty soup that doesn't hit bottom right away, so watch how much you eat. We like cilantro, but not sure it really needs it so remember it says optional. My husband did add frozen corn when making & we both liked that addition, along with some garlic.

Slow Cooker Carnitas

So easy & can be used so many ways. I took others suggestion & doubled the spices except for salt & cinnamon. We used with tortillas & guacamole one night & as BBQ pork the next. Froze left over shredded meat and kept juice separate.

Slow Cooker Latin Chicken

This makes the house smell really good. I used skinless chicken breast, & just placed in slow cooker instead of browning. They cook just fine & you can eliminate having a dirty fry pan. I served with warm tortillas, but may try serving over rice also.

Bread in a Bag

My husband made this & said it was a good concept, but no advantage in doing it this way. Certainly wasn't easier. The bread itself was ok, but have better recipes. Won't be making this again.

Black Magic Cake

Moist, I so much better than a box cake. I did use 1 3/4c sugar instead of the 2c. Also, used a cup of espresso coffee for a fuller flavor. Fantastic cake.

Pizza Rolls

This was a little more work for us because we used the Esquisite Pizza Sauce receipe from this site that we like alot. I used egg roll wrappers, but will try won ton wrapper next time. Also, just fried in canola oil in dutch oven since we don't have a deep fryer. (worked just fine & only took a couple of minutes) I'd like to try using a ranch or alfredo type sauce with chicken to see how that goes. I would suggest using a good pizza sauce though.

Filet Mignon with Rich Balsamic Glaze

Very Good!!!! I had a hard time getting over the "frying" of a steak. Charcoal grilling is the only way I like steak, but WOW. Simple & easy, but make sure you sear all the edges to keep juice of meat in like the expert stated. We used sirloin that was very thick & cooked the time suggested & they were cooked more than we'd like. It wasn't bad though since they were so thick. I'd cook only 1 - 2 min if normal thickness because we like ours med rare & that should work. I think after taking steak out I'll try to reduce the sauce some before serving, otherwise use half as much since we won't be cooking as long & it made so much.

Chicken Cordon Bleu Burgers

Quick, easy & good. We vut back on the amount of sauce made, but it was still alot. I think it could be cut in half. We also used Dijon mustard because we like a the kick.

Spicy Chipotle Turkey Burgers

I've had this recipe in my folder since June 2008, but never got around to making it. A diffinite keeper & I wish I'd made these before. They are very filling. The first time I made this, I didn't have chipotle chile in adobo sauce, so just used chipotle pepper that was crushed. It was good that way, but using the chipotle chili in adobo sauce makes it more flavorful. We do use a lot of cilantro by choice.

Chinky's Mango Bread

This was so moist & easy to make (hubby prepped the mango). Only problem was adjusted to make only one loaf of bread & it didn't last more than a couple of hours. I have another mango so will make again. I did use cranraisins & will put alot more in next time. The sugar I reduced also per suggestions. It was sweet enough without all of it.

Chipotle Crusted Pork Tenderloin

Easy & very flavorful. I did take others suggestion & reduce the chipotle chile powder. For a 1 1/2lb tenerloin I used 1 T chipotle powder. We cooked on an electric grill in the garage (lots of snow here) & it took longer than usual because of how cold it is now. Next time I'll compensate (if during the cold season), or just bake. Can't wait to make again. The garage smelled great even this morning from the cooked tenderloin.

Cranberry Pistachio Biscotti

Took others advice & used orange extract instead of the almond, but next time I'll use the almond. We didn't like them at first, but after sitting over night they were better. Do double the cranberries. Will make this again & then decide if we're keeping.

Ninety Minute Cinnamon Rolls

Good, but nothing better than what we already make so won't be doing these again. For those who don't have a roll recipe you might want this. We didn't like the way the recipe called for the yeast mix in with the other dry ingredients. Yeast does better with warm water & in some recipes the sugar. Then, let it work into a foam better adding dry ingredients.
