Halloween Popcorn Pumpkins

Giving this a 2 because it is a good idea, but the ratio of popcorn to marshmallow sauce. Getting things out of the muffin tin, even with greasing things, was a mess. After the 1st batch which I followed the directions exactly flopped, I made another batch using a popcorn ball recipe I had. That worked better because I formed the balls & wrapped in saran wrap & put in the refrigerator for awhile. I don't know if I'll make again or not, but won't use as many peanuts since I don't like to many in stuff like this.

Red Pepper Soup

Made a couple of times now & it is a little time consuming with my changes, but worth it. I took others suggestions & roast the peppers. Peeling is a pain, but like I said, worth it. I do add 1/8 tsp cayenne pepper & 1/4 c coffee mate creamer so I can use 1/2 & 1/2 instead of heavy cream. Thanks for sharing this recipe.

Cinnamon Cookies II

Something different & will make again. These are nice & soft in the middle. I did take others suggestions & used both white & brown sugar. Also decided to use part hone & part molasses because molasses can be strong & suggestions were to substitute honey. A nice fall season cookie.

Easy Rum Cake

Couldn't get dark rum so used light & I like it better. Hubby thought the glaze was to strong, so next time will use a little less but that is preference. I liked this better than the Rum Cake I bought through an on-line coffee website I order my espresso beans from.

Apple Tarte Tatin

Not an easy thing to make. Ranked this a 2 mostly because it isn't to get the pie to turn out. If you want that nice ruffle edge. I may have cooked longer than I should've in the skillet because I didn't have much "sauce". It tasted fine, but my preference would be to add cinnamon & double the sauce. Think we'll just stick with the regular apple pie even though this is easier by just quartering the apples instead of slicing.

Cilantro and Garlic Potatoes

I had really wanted this to be something different but was disappointed. Since I did take advice of others & didn't deep fry the potatoes I thought I'd give it another chance, but hubby said just delete it. He couldn't figure out why the cilantro was put in before the potatoes because he couldn't taste it at all. It was worth a try, but I'd deep fry the potatoes as stated because maybe this would taste better.

Blah, not much flavor & doesn't stick together. To salvage I just fried it up & we ate it. Poor hubby ate most just to get rid of it.

Maui Girl's Mango Pie

Made just as stated & both hubby & I loved it. It is like apple pie except not tart. This pie wasn't soggy like apple can make a crust either. Will make again. The only thing I may do & it is minor is sprinkle sugar & cinnamon over the top crust after putting some melted butter on it.

Tomato Basil Pasta

I served this with warm pasta, but reduced the feta & shouldn't have. We added more feta to make the amount asked for. Maybe if it was cold pasta I could've gotten by with less as usually feta cheese is overpowering to me. Will make again & probably add more fresh basil.

Braised Balsamic Chicken

Different. We did use a tish less of the Balsamic vinegar, but otherwise did as recipe said. I think next time we'll grind up the rosemary & serve with linguini or spaghetti.

Balsamic Grilled Zucchini

This just doesn't cut it for us. With the spice and balsamic being so heavy, you don't get taste of zucchini. I don't know if changing the amount of seasoning or balsamic would make a difference, but we're not making this again. Very disappointed as we like zucchini on the grill & thought this would be a nice change from some of the ways we already prepare it.

Baked Omelet Roll

Light & fluffy, but only a starter recipe. Next time we make this we'll still use the 9x13 pan. We'd used a 9x9 since we reduced the number of servings. It needs the "normal" toppings for an omelet like mushroom, pepper etc. The toppings would need to be fried first & put on after egg mixture has set some. Will make again.

Spicy Southwestern Slaw

Different. We didn't add the jalapeno since we didn't have one & you sure don't need it. We cut back on the cayenne pepper a little, but will try 1/2 tsp next time. Also reduced the onion, pepper & oil. Instead of going through the hassle of shredding cabbage we just bought a bag of coleslaw & that worked well. We put over pulled pork & was very tasty. Usually use creamy coleslaw for things like that, but this was a nice change. Will make again with our reduction changes.

Campfire S'mores in a Cone

This is a basic start to a good idea. We've tried & I sent a couple of variations over to the neighbors & kids for some input. Everyone liked, but needed to tweek . Everyone liked the adding graham cracker, don't have marshmellow on top because it sticks to the foil. We just put in the oven, but would suggest a low temp like maybe 250 & maybe then the marshmellow wouldn't puff up & stick. Will make again.

Italian Tacos

Easy to make, but won't make as is again. I think you really need to add mushrooms, ricotta cheese or something. Also I'd add the sauce to the meat mixture so it isn't so runny. I'm going to try this with large pasta shells and as a sub/hoagie I think.

Grilled Five Spice Chicken

I was going to try this once more, but hubby didn't care for it so won't. We used chicken breast without the skin so I don't know if that had anything to do with it being so grainy tasting or not. I think it just had to much five spice seasoning, but guess won't be trying to tweak this now. We like five spice seasoning so thought it would be good, but just to much I think.
