Fried Broccoli

Quick & easy but very similar to another one I have using Cajun spice. You don't get the bloated, gas feeling when the broccoli is fried I think.

Spicy Bacon-Wrapped Scallops

Disappointed. Had for New Years Eve & the bacon took over in flavor. You didn't even taste the scallop. With the price of scallops we'll stick to other recipes to use. It was quick & easy to make.

Apple Walnut Salad with Cranberry Vinaigrette

Didn't like the dressing at all - to much onion & we didn't use all it called for. I think it also had to much balsamic vinegar or Dijon mustard also. We'll stick with other recipes that have cranberries & walnuts in from this site that we like.

I printed this out in 2008 but just got around to trying it. WOW. I gave 2 bottles to the neighbors for Christmas & one said it was going in to her hot cocoa for sure.

Southern-Style Oven-Fried Catfish

Good for a baked catfish, but nothing beats deep fried. We did use less hot pepper sauce thinking it'd be to hot, but next time we'll use closer to the tablespoon if not all. This is the best of any baked fish recipes though. I would recommend using 1/3 c. cornmeal & 2/3 c. panko as I'll make that change next time. This time I'd tried 1/2 & 1/2, but still to much cornmeal for our taste. I'd also squirt with some oil (oil or canola) to help crisp it up better.

Simple Carnitas

Pretty good when you eat right away, but we had leftovers & froze for a couple more meals. We ate one of those last night & it wasn't that great. I think I'll stick with the Slow Cooker Carnitas from now on unless I reduce the recipe even more from 5 servings to maybe 2 or 3. Won't freeze this again & don't know if we'll even be able to use the others in the freezer.

Basil, Roasted Peppers and Monterey Jack Cornbread

Very disappointed. This sounded good & should've had great taste with the pepperjack cheese and basil, but it was blah. It took forever it seemed to make compared to other cornbreads. Also the name says Monterey Jack cornbread, but there isn't any Monterey Jack cheese in it, just pepper jack. Won't bother with this again.

Easy Pepperoni Bread

Gave this 5 stars but only because I used the Focaccia Bread from this website instead of frozen bread. I also took others suggestion & added cheddar cheese for more taste. With the herbs in the Focaccia bread & adding a sprinkling more of basil, onion & garlic powder & oregano it really hit the spot. I've given this new combination of focaccia/pepperoni bread to several others already. Using the focaccia bread instead of frozen bread dough was also less time consuming & easier which is up my alley. There is no defrosting, rising for couple of hours & punching down dough. I wanted to try dipping in marina sauce but it went to fast. Good warm or cold & no need for any butter or dipping sauce.

Asian Pork Burger

This is a mind teaser. My head says it is a burger, but the taste buds say it is ribs. This is fantastic, but for me not something I'd eat as often as a regular burger. This is special & would be a treat. My husband asked if there was liquid smoke in it, nope. He couldn't believe either how much it tasted like good ribs. I didn't have apple cider so didn't use anything in its place, just left out. I really don't see what it could've added because they were very moist & you have to put in the freezer for the 30 min to keep them firm. We didn't know if you'd use ketchup on these or what. I'd recommend just butter the bun & crisp them up. We did try a little BBQ sauce on a bite or two & it still tasted like a good rib with BBQ sauce then. I'm still having a hard time getting my head around how teriyaki sauce, apple, red pepper, ginger & soy sauce, onion & bread crumbs come out like they did for the flavor. Sorry, can't say enough, so good & juicy with lots of flavor.

Roasted Parmesan Rosemary Potatoes

Have made a couple of times & taken others suggestion of adding garlic or microwaving potatoes first. I didn't have fresh rosemary so took 1/2 tsp & ground it up in my grinder. You can bakes these or pan fry it is versatile.

Strawberry Avocado Salad

We didn't refrigerate prior to serving & it was just fine so maybe had we let the flavors blend together it might've been even better. I didn't have any torn greens so used spinach otherwise everything was as called for. I can't believe I've had this recipe in my box since 2007 & hadn't tried it. Will make again that is for sure.

Backyard Bourbon Beef Marinade

Very nice with a hint of sweet. The steak was very tender. We originally adjusted recipe to amount of steak we were doing, but hubby still had to cut it in half again & had plenty to marinate in. I did think the soy sauce was a little dominating & made it salty for my preference so we'll cut that back just a tad for next time. I suppose since we marinated overnight could be why it seemed salty to me. We decided a serving for one will be enough marinade for one pound of steak. If that doesn't work we'll adjust accordingly.

Smoky Grilled Pork Chops

Really good rub. Hubby wants to try on ribs & pork roast also. Quick & easy, but I thought to salty for us b/c of health so will try 1 tsp seasoned salt next time. Keeper.

Herbed Greek Roasted Potatoes with Feta Cheese

Didn't use all the water, just 1T & 1 tsp total. Also didn't have fresh mint, but used dried so it did have some mint flavor. Since it was hot outside we used our electric grill to cook these instead of warming up the house. Will make again.

Balsamic Chicken and Fresh Mozzarella

I liked it better than hubby, but will make a few changes next time. We won't slice the chicken as because it was to hard to keep basil, moz & tomato on. Next I won't use fresh moz pearls, but slices of moz. Because I did those things so it could be presented nicely, the chicken had a cool taste instead of being hot. Liked the flavors.

Slow Cooker Zucchini Soup

This is your basic minestrone start up. It was easy & good, but think it was really because of our homemade Italian Sausage from this site. I would make this again since we don't always want the beans & other ingredients with minestrone soup.

Freezer Peach Pie Filling

The taste was pretty good but did use more tapioca & cornstarch others suggested. This sure was easy to make into a pie since the work was done & in the freezer. The problem I had was I thought it was frozen when I took it out of the pan to put into the freezer bag & it wasn't as solid as I thought so ended up with a mess dripping down the freezer walls. When I went to bake things were fine, except it took so much longer. I'd say when I turned it down to the 350 it actually baked for more than an hour total. Will make again & see how it goes then.

Southern Fried Chicken Strips

Better half said a 4, but I thought a 3. Easy to make, but needed some zip. Will make again, but try adding some cayenne pepper to the cracker, potato etc coating. Think my bake chicken strip recipe is better but will be a good wife & make these again for hubby.

Zucchini Cheddar Pancakes

After seeing this yesterday we had to try today. Fry hot so they're crispy. Gave this 4 only because it does need the recommended garlic. We used garlic powder & it wasn't enough so next time we'll use more garlic powder or a whole garlic minced. Tried plain & w/sour cream as others suggested. Hubby & I both feel eating them free of anything was the best. Next time we make these I'd like to try using half the bath of dough & add other herbs or spices to give it a lift or jolt also.

Spicy Mango Salad

Have made this several times & really easy to make. We like spicy, but are still trying to find the right amount of red pepper flakes for us. We're down to trying 1/4 tsp for a serving of 3. Love those mangos.
