Sweet Potato Corn Bread

Very disappointed. We love sweet potatoes & we love corn bread so I thought this would be a great combination, but won't be making this again. The first time we ate it warm & today my husband took leftovers to eat cold (does this with regular corn bread) with his lunch. When we ate it warm, it seemed dry & I could hardly taste the sweet potato.

Mediterranean Stuffed Chicken

Not real sure about this recipe yet. Did as directed, but baked for 30 min. Next time I'm going to bake approx 25 min & broil for a couple min to brown up the breast. I think seeing pale chicken was the turn off. Taste was different & not something you'd make often.

Chicken Pot Pie IX

I liked this, but I don't think you need the celery seed. My husband thought it was ok, but it gave him such indigestion that we won't be making it again. We do like the slow cooker chicken pot pie from this website, so we'll probably just use that one in the future.

Spinach and Mushroom Quesadillas

I would've rated a 5, but husband thought, as recipe is, it is only 4 stars. Next time we'll use more garlic. Easy to make, but make sure you melt the cheese in the oven because it doesn't take long to fry these & the cheese doesn't melt quick enough otherwise. Will make again.

Coffee Chocolate Chip Cookies

Took others suggestion & added cinnamon - 1 tsp. I'm not a fan of almonds in cookies, so I used almond extract instead of vanilla. We really liked these, but it won't be something I make frequently. Even the cat liked the smell of these & went after the bag we had them in. They're especially good with some chocolate ice cream.

Self-Filled Cupcakes I

I've had this recipe for ages, but never made it until I saw this one & compared them. I did use the other recipes sugar amount of 1/3c because we don't need all that sugar. Love the idea of these cupcakes & used others suggestion of only filling 1/2 full, but that still didn't help - I had a mess. I'll make again, but only fill 1/4 - 1/3 full & cut back the filling to 1/2 amounts because it made so much. You don't need to ice or drizzle these because they are very moist & sweet enough.

Spicy Oil and Vinegar Bread Dip

Gave it a 3 because of the strong balsamic taste. We're going to try once again with only 2T & see if that helps. You couldn't taste the flavors of the herbs because of the strong balsamic taste. Just ok as is.

Steak House Au Gratin Potatoes

I messed up & put the cheese in with the flour (didn't read ahead) but came out anyway. Will make again, but probably make extra sauce. I didn't have the heavy cream, but used 1/2 & 1/2 that I had & I thought they were creamy & didn't need the extra fat.

Banana Custard Scrunch

Easy, but just didn't care for the bananas like this. I'll try with strawberry, blueberry or peaches in it & change the yogurt to match. If that doesn't work I'll probably toss the recipe. I like banana cream pie, but that is always made from scratch, not boxed pudding so maybe that is what I didn't like - brand name used.

Frozen Latte Dessert

My hubby said to give it a 4, but I'm going to make to many changes so made it a 3. This was blah I thought & even added more instant coffee as others suggested. My changes areto use my recipe for homemade espresso fudge syrup, use only 1c heavy cream & choc syrup. After that is whipped up I'm going to fold in cool whip. This should make it easier on my arteries & have a lighter, latte flavor. A good starter for those of us who like to experiment.

Oatmeal Crispies II

Easy, but not what I thought it w/be. There was nothing crispy about this. It was like eating a buttery oatmeal cookie & I was looking for the lacy, thin crisp of a cookie. I've found another recipe on another website that I'm going to try. These were good & hubby really liked, but not what I thought it was.

Zucchini Brownies

Made exactly as given & thought it was good, but....hubby really liked them. I don't think it needs all the icing, so next time will make 1/2 recipe for a 9x13 pan. Also, I had to bake longer because it seemed running in the center. You wouldn't know it had zucchin unless you read the recipe. I don't think I'll put all the sugar in next time either, but add maybe some cinnamon. It is a keeper. I think I may also try others suggestion & use applesauce or go without icing completely.

Blue Cheese Fried Potatoes

My husband thought this was a 4 or 5, but I just couldn't. I'll make again because I liked it, but will make changes. I'm going to either dice or shred the potatoes. It was to hard frying such thick slices. Also, the blue cheese was to overbearing for me. I'll use less & add some cheddar jack or monterey jack type cheese. My onions burnt putting them in right away with the thick sliced potatoes. Being so thick, the potatoes didn't cook through well either.(I used a large frying pan even) I think I'd probably add miced garlic & not cook the bacon as long so when it is added to potatoes it can finish browning. These were good, but for me needs tweeking if I'm to make again. If hubby cooks, he'll probably do as is.

Colorful Vegetable Fajitas

Have made this several times & it is so flexible. We don't care for green peppers, but use extra red, yellow or orange peppers. Can add mushrooms, garlic, chilies, anything else you like. Nice flavor & so good for you. IF you have any leftovers, you can add to scrambled eggs for a breakfast burrito. (can add a little sausage even)

Fruity Tart

Won't make again. I used a brand name pudding & fruit jam, but didn't care for it. Blah. I could take the time to make it alot better buy making vanilla pudding from scratch & using a different crust. I'd leave off the jam because I don't think it did a thing. My fruit was basic - strawberry & blackberries which were fine.

Berry Cobbler

I didn't care for it (after taste), but my hubby thought it was good because it was a heavy cake. We didn't have raspberries so I used blueberries & peaches as others have suggested. I think there are better cobbler recipes on this site & don't know if I'd make again or not.
