Simple Scones
Wow! we made these on the first snow day here in Beijing. They were awesome. I threw in some cinnamon and nutmeg, and subbed cranberries for currents. OH. and i used plain yogurt instead of the sour cream. So easy and so good.

Spanish Rice II
Wow! I was a little worried about this one...frying uncooked rice?? But this recipe was SO easy and is an instant fav of mine. I used 2 diced tomatoes instead of the canned stuff, and added some chicken granules since i didn't have any broth on hand. I'm making this anytime we have mexican food.

Feta Cheese and Bacon Stuffed Breasts
this chicken is SOOOO good and moist. i subbed out the feta for blue cheese, since that's what we had on hand, added some cooked spinach, and held off on the salt...since the cheese and bacon were so salty already. Its pretty easy to put together, and comes out looking fancy! One to use to impress dinner guests!
