Carrot Cake III

Reviewed: May 7, 2008
Excellent, delicious. I read several of the comments which helped me a lot. I added 3 tsp of cinnamon and vanilla instead of 2 and I used 1/2 white sugar and 1/2 brown sugar. On the frosting I only used 2 cups of the sugar needed and it tasted sort of like cheesecake it was delicious.

Enchilada Sauce

Reviewed: Jul. 1, 2009
Excellent!!! Loved it. I noticed that if I roast the chilis in a pan then soaked then in the water it actually made them easier to remove the pulp. I used ancho chilis and New Mexico chilis. Great taste.

Jewish Coffee Cake

Reviewed: Jul. 2, 2009
Excellent. The cake flew, didn't last long. Even my nephews ate it all. The change I made was brown sugar instead of powdered sugar.

Real Homemade Tamales

Reviewed: Mar. 11, 2008
This is delicious and very easy to make. I will use New Mexico chili next time for more heat because the California chili pods have no heat at all but still a great, amazing taste. For the masa I used double the salt indicated and it came out great, I will definetely make them again. Thanks for the recipe.

Carne con Chile Rojo

Reviewed: Jul. 28, 2009
Very good. My dad was known for his carne con chile. He will roast the chile de arbol peppers in a pan, then blend them and keep them on hand. I also added tomatoe sauce and alittle water/chicken stock at the end with some flour to ticken it up.
