Vicki's Hush Puppies

Mmm mmm mmm! I was hunting around for a major food comfort recipe and stumbled upon these. I thought making hush puppies would be such a daunting task so have never tried before, but these were SO easy to prepare. I only made quarter of the recipe since it was just for me and I scaled all ingredients except for sugar (I used about 1/4c?) since I wanted them somewhat sweet. I also grated the onion as I thought I would prefer the texture that way, and added just a droplet of milk at the end since the batter seemed a bit dry. This recipe seems to be pretty forgiving since I was measuring very lazily. I was in and out of the kitchen in 15 minutes easily. YUM-MY, these were delicious and did just the trick I will be making these again and again (yum!). Thanks Vicki C :)

Best Big, Fat, Chewy Chocolate Chip Cookie

I have never ever been able to bake, my recipes ALWAYS seem to fail no matter what I do. These, however - came out PERFECT. They tasted Just Like Ms. Fields cookies, I couldn't believe it. I actually gasped in disbelief when I bit into the first one,ha! :) Thanks very much for posting.

Marinade for Chicken

Simple and delicious. Easy to convert measurements to suite however much you need. And best of all - no garlic! Will use again and again :) thanks poster

Herbed Green Beans

This is a good 'base' recipe to have. I used fresh green beans and upped the spices to about double to better suit my taste. I also cooked them in a pan instead of using the microwave.

Chewy Peanut Butter Chocolate Chip Cookies

These were delicious! I agree with other reviewers in the peanut butter taste not being too apparent, but I somehow think it adds to the chewiness of these yummy cookies. I stuck exactly to the recipe except I made them about half the size stated (they are huge otherwise)and my oh my I had to stop myself at cookie #3. I accidentally baked them a minute or 2 longer than I should have, but it didn't have any effect on how they came out, 4 days later the few cookies I have left are still soft and chewy. Perfect for dunking in milk! This recipe is a keeper.

Basil Chicken over Angel Hair

I love this! It makes for a very light but satisfying meal. I think its essential to use all fresh ingredients to really taste how good this is. Don't forget to use the fresh basil, it really makes the dish. I followed the recipe as is except I used crushed red peppers instead of hot sauce, I also used freshly grated parm. Even my picky hubby loved it. Thanks!

Spinach Enchiladas

These were yummy. The only thing I did different was add a bit of seasonings to the filling (cumin, garlic salt, pepper) because it seemed a little plain when I tasted it. Was a nice change from the usual chicken enchilada. I used the 'Ten Minute Enchilada Sauce' recipe from this site with these instead of ready made sauce. Was delicious :) Will make these again, thanks!

Ten Minute Enchilada Sauce

This sauce was the best. It was really, really close to the sauce my grandmother makes, I never thought I'd ever come close to being able to make something that good. And it was so easy! The only thing I changed was that I added 1 heaping tsp of peanut butter to the sauce and then let it simmer. I know, it sounds really odd but it adds something to the taste! (some people use dark chocolate, but my nana does peanut butter so thats what I used) I made this sauce to use with the 'Spinach Enchiladas' and the 'Mexican Rice I' recipes from this site. It was one delicious dinner!! I will use this from now on. Thanks!

Broccoli and Tortellini Salad

I was a bit hesitant to try this recipe because I couldn't picture how all the flavors would fit with each other. But I thought it was great, really light and yummy sweet + salty combo. The only thing I changed about it was I doubled the dressing (but used half the sugar, else it would have been too sweet). I also blanched the broccoli to make it easier to eat. Next time I think I'll use dry tortellini's because they did get a little too soft after sitting in the fridge for a couple hours but in my opinion it didn't hurt the taste/texture of the salad. I kept the raisins on the side to sprinkle on after serving as my husband wouldn't eat them, but they went really well :) Will have this again.

Oatmeal Carmelitas

These are sinfully delicious. I've had to use some serious restraint to not eat the whole batch :D I baked them for 25 minutes (without checking up on them) assuming mine would need some extra cooking like a lot of other members, and ended up just slightly overcooking them, so they were a bit harder then I would prefer. Next time I'll bake for 15-20 minutes and I know they'll be just perfect. I

Spinach, Egg, and Pancetta with Linguine

This was sooo yummy! Per member reviews I cut the pasta in half, a whole package would have been way too much. I used a bit more spinach and pancetta, and added a little more oil and a little pasta water so it wasnt so dry. Came out excellent! I love how the crushed peppers give it just a little bit of heat but nothing overbearing. The flavors mesh together perfectly, never would have thought. This is definitely a keeper :)
