About this Cook
I'm a happy, proud Army wife who loves to cook things that make my honey smile!
My favorite things to cook
Chicken, soups, desserts (although I don't like to eat them a lot- I prefer to give them away), beef, Italian and Mexican dishes
My favorite family cooking traditions
Being in my grandmother's kitchen! That's where I learned to cook, and where my family congregates on the holidays... :) Great memories!

To Die For Blueberry Muffins
Tried it as written and it is good, but too sweet and cake-like for me. I like a light breakfast muffin and this just wasn't it. (I'm a fan of Jiffy lol) The batter was really thick, kind of like a blueberry cake recipe I have. Don't get me wrong, it is good, just not what I'd eat for breakfast. I felt like I was having dessert.

Chef John's Hot Spinach Artichoke Dip
I tried this recipe as written (splurged for the cheeses and everything) and I wasn't really impressed. It was a fancy "spread" but not really a "dip". I thought there was too much spinach and artichokes for the amount it made. I would probably double the recipe and keep the amount of spinach and artichokes the same. It was not creamy/liquidy enough for me so you couldn't really dip the tortilla chips in it, which is the way my husband and I like it. The gruyere has a really smoky and distinct taste. It added a lot of flavor, but was just a bit over-powering for me. I was really attracted to the recipe because it doesn't use mayo, which I can't stand. So, overall I'm disappointed. I'll try to add something to make it more dip-like if I make it again.

Chicken Pot Pie IX
I made all of the suggestions I saw in other reviews and this turned out wonderful! Added 1 c. frozen corn and doubled the liquid filling. Also, I mixed it all together before I poured it into the pie shells. I actually had enough filling to fill a deep dish pie plate and a normal pie plate. My husband loved it!! :)
