Classic Bran Muffins

Delicious! It was moist and a good crumb texture. I followed the recipe as written except I didn't add the raisins. I don't like raisins in my baked goods. I added chunks of banana instead and it was great! This is my go-to bran muffin recipe from now on!

Banana Crumb Muffins

Excellent! I made it as written except i added 1 tsp of vanilla extract. Great texture and flavor. It was light and fluffy and just enough banana flavor. I don't think you need to double the topping as others as suggested. There was enough as is. This is definitely a keeper!

Dark Chocolate Cake I

Excellent! Made exactly as the recipe is written. Great chocolate flavor, moist and not too sweet. Some reviews said this cake was dense. I thought it was just the oppsite - light and fluffy. This is definitely a keeper. I recommend using a good quality cocoa powder to produce a cake with good flavor, not one of the store brands like Hershey's.

Delicious Ham and Potato Soup

Yum! This soup had great flavor and easy to make! I only used 1/2 the amount of bouillon since we have to watch our sodium and it still came out great. Also I didn't add salt to the soup since the bouillon has enough. In fact it was probably better that I only used 1/2 because other reviews stated it was a little too salty. I also added rotisserie chicken since I had some leftover in the frig which I thought tasted better in the soup than the ham. Next time I will add more vegetables like corn and peas. This is a keeper! Will definitely make again.

Overnight Coffee Cake

Absolutely wonderful! Made it as written except I omitted the nuts because I don't like nuts in my baked goods. It was moist and quite tasty. I left in the fridge for about 20 hours and it still baked up nicely. This recipe is a keeper.

Slow Cooker Chicken Taco Soup

Excellent! My family loves it! The only modification I make is I don't use the entire packet of taco seasoning mix. Just a personal preference. Trying to cut down on our sodium. This is definitely a keeper!

Sturdy Whipped Cream Frosting

Excellent frosting! Everyone really liked it. Not too sweet and great flavor. I didn't add the almond extract because I didn't have any and personal preference. I also used mascapone cheese instead of cream cheese as others suggested. Cream cheese has a much stronger flavor and didn't want it to interfere with the flavor of the whip cream. It turned out great! I recommend putting this in the fridge for a bit to stiffen up a little before frosting the cake.

Downeast Maine Pumpkin Bread

Excellent! The first time making this recipe I followed it exactly as written. I didn't care for the ginger in the pumpkin bread so I omitted it the second time making it. Absolutely loved it! I've received so many compliments. This will be my pumpkim recipe from now on.

Banana Cream Pie I

Excellent! I took the advice of others and only used 1/3 cup of sugar and 1/6 flour and 1/6 cornstarch. It turned out perfect! Not too sweet and the consistency was just like pudding. Tasted great! I'll be using this recipe from now on.

Excellent! I didn't think I'd like ground turkey in chili. I usually use ground beef. But this recipe was very good! Great flavor. This recipe will replace my current chili recipe. This is a keeper!

Hot Fudge Ice Cream Bar Dessert

Pretty good! Very tasty. I didn't give it 5 stars because i thought there was a little too much chocolate syrup. It made it a little too sweet. Next time I will cut down on the chocolate syrup. I think the peanut butter really made this recipe. I don't think it would taste nearly as good without it. As others have stated i also had to use more ice cream sandwiches - approx 24. You should make this in a deep pan so you don't have to smash the layers down. I will definitely make this again.

Chocolate Chocolate Chip Cookies I

These cookies were pretty good! Very easy to make. They came out soft and brownie-like. I took the suggestion of others and made the cookies on the smaller side since they are rich especially with the chocolate chips.

Pumpkin Cake III

YUM! Really good! I'm only giving it 4 stars instead of 5 because I had to add and change things in the recipe. 1st time i made it as written. It was very moist, but thought all that oil was not necessary and it neeed more spices. 2nd time i made it i did as others suggested - used 3/4 cup oil and 1/2 cup applesauce. Added 3/4 tsp nutmeg and 1/4 tsp cloves. The pumpkin flavor was very good with the addition of the spices. The cake was very moist but too moist where it was a little wet and dense. 3rd time i made it i did 3/4 cup oil and no applesauce. Added the nutmeg & cloves. Perfect! Cake was moist (but not wet) and soft and fluffy. This is my go-to pumpkin cake from now on.

Mini Pumpkin Whoopie Pies

Very good! The reason why I'm giving it 4 stars instead of 5 is because I had to add additional spices to make it taste more like pumpkin. I added 1/2 tsp nutmeg and 1/4 tsp cloves. The cookies by themselves were very good! I took the suggestion of others for the cream cheese filling and used 8oz of cream cheese, 4 tbsp of butter, 1 tsp vanilla, 1 cup of powdered sugar. The sandwiches were very good after they sat in the frig to set up! Will definitely make these for thanksgiving.

Quick Savory Cranberry Glazed Pork Loin Roast

Very good! I cooked the pork loin roast to 160 degrees which took a little more than 45 minutes. I even cut the roast length wise so it won't take so long to cook. A 4lb roast is quite big! I think next time I won't cook it as long..maybe to 150 degrees. The pork was slightly tough. I liked the cranberry sauce but didn't love it. I think it had too much bouillon flavor. I will cut down on that next time. Otherwise the sauce was good. I will definitely make this again with a couple changes.

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Very good! The pork came out very tender, juicy, and flavorful. The ginger in the apricot glaze was a little over powering to me. I think next time I will reduce the amount of ginger... just my personal preference. Also I had a lot of glaze leftover. I may cut the glaze recipe in half next time. Will definitely make this again! This recipe is a keeper!

Apple Cake I

Very good! I followed the suggestion of others and used 3/4 cup of oil and reduced the sugar to 1 1/2 cups. The batter was VERY thick like cookie dough so I added a little milk to thin it out a bit. It turned out very moist and not too sweet. I baked it in a 9 x 13 pan. I had to bake it a lot longer than the recipe stated approx 50 minutes. I think next time I'll bake it in a smaller pan because its a rather short cake. Its about the height of brownies. Will definitely make this again!
