Pumpkin Cake III

YUM! Really good! I'm only giving it 4 stars instead of 5 because I had to add and change things in the recipe. 1st time i made it as written. It was very moist, but thought all that oil was not necessary and it neeed more spices. 2nd time i made it i did as others suggested - used 3/4 cup oil and 1/2 cup applesauce. Added 3/4 tsp nutmeg and 1/4 tsp cloves. The pumpkin flavor was very good with the addition of the spices. The cake was very moist but too moist where it was a little wet and dense. 3rd time i made it i did 3/4 cup oil and no applesauce. Added the nutmeg & cloves. Perfect! Cake was moist (but not wet) and soft and fluffy. This is my go-to pumpkin cake from now on.

Hot Fudge Ice Cream Bar Dessert

Pretty good! Very tasty. I didn't give it 5 stars because i thought there was a little too much chocolate syrup. It made it a little too sweet. Next time I will cut down on the chocolate syrup. I think the peanut butter really made this recipe. I don't think it would taste nearly as good without it. As others have stated i also had to use more ice cream sandwiches - approx 24. You should make this in a deep pan so you don't have to smash the layers down. I will definitely make this again.

Mexican Chicken I

Good chicken but it didn't 'wow' me. I thought it was average. I thought it tasted more like chili than a mexican dish. I followed the recipe exactly except I only used 1/2 the amount of black beans. I thought one can was more than enough. Not sure if this will be in our regular meal rotation.

Delicious Ham and Potato Soup

Yum! This soup had great flavor and easy to make! I only used 1/2 the amount of bouillon since we have to watch our sodium and it still came out great. Also I didn't add salt to the soup since the bouillon has enough. In fact it was probably better that I only used 1/2 because other reviews stated it was a little too salty. I also added rotisserie chicken since I had some leftover in the frig which I thought tasted better in the soup than the ham. Next time I will add more vegetables like corn and peas. This is a keeper! Will definitely make again.

Cran-Pistachio Cookies

I was disappointed in this recipe. I didn't think these tasted like pistachio at all. It tasted like almond extract instead. They're good if that's the flavor you're looking for, but I wanted more of a pistachio flavor. I probably won't make these again.

Mini Pumpkin Whoopie Pies

Very good! The reason why I'm giving it 4 stars instead of 5 is because I had to add additional spices to make it taste more like pumpkin. I added 1/2 tsp nutmeg and 1/4 tsp cloves. The cookies by themselves were very good! I took the suggestion of others for the cream cheese filling and used 8oz of cream cheese, 4 tbsp of butter, 1 tsp vanilla, 1 cup of powdered sugar. The sandwiches were very good after they sat in the frig to set up! Will definitely make these for thanksgiving.

Quick Savory Cranberry Glazed Pork Loin Roast

Very good! I cooked the pork loin roast to 160 degrees which took a little more than 45 minutes. I even cut the roast length wise so it won't take so long to cook. A 4lb roast is quite big! I think next time I won't cook it as long..maybe to 150 degrees. The pork was slightly tough. I liked the cranberry sauce but didn't love it. I think it had too much bouillon flavor. I will cut down on that next time. Otherwise the sauce was good. I will definitely make this again with a couple changes.

Dark Chocolate Cake I

Excellent! Made exactly as the recipe is written. Great chocolate flavor, moist and not too sweet. Some reviews said this cake was dense. I thought it was just the oppsite - light and fluffy. This is definitely a keeper. I recommend using a good quality cocoa powder to produce a cake with good flavor, not one of the store brands like Hershey's.

Pumpkin Crumb Cake

This was just ok. I followed the recipe as written, but made one exception. I reduced the sugar in the crumb topping like others suggested, but it was still a little too sweet. Also the crumb topping gets soggy after sitting for a while. I think a more traditional crumb topping may taste better.

Banana Crumb Muffins

Excellent! I made it as written except i added 1 tsp of vanilla extract. Great texture and flavor. It was light and fluffy and just enough banana flavor. I don't think you need to double the topping as others as suggested. There was enough as is. This is definitely a keeper!

Slow Cooker Chicken Taco Soup

Excellent! My family loves it! The only modification I make is I don't use the entire packet of taco seasoning mix. Just a personal preference. Trying to cut down on our sodium. This is definitely a keeper!

Overnight Coffee Cake

Absolutely wonderful! Made it as written except I omitted the nuts because I don't like nuts in my baked goods. It was moist and quite tasty. I left in the fridge for about 20 hours and it still baked up nicely. This recipe is a keeper.

Quinoa and Black Beans

It was just ok. Nothing to write home about. I made it with chicken broth instead of vegetable broth. I thought 1 can of black beans was more than enough. Those were the only changes I made. I didn't really care for the cumin in it. I think I may try it with a different spice. This has potential but I need to make changes to suit my taste.

Chocolate Snaps Sugar Cookie

Update: I changed my rating from 5 stars to 4 because I tried the Chocolate Chocolate Chip Cookie 1 recipe from this website and thought it was much better. Cookies tasted great even a few days later unlike this recipe. Previous Rating: This recipe was good. They're soft, chewy, and just the right amount of chocolate. I also took the advice of the others and omitted the 3 Tbs of margarine. I added the cocoa powder with the flour mixture. They came out great! Best if eaten the first day. Not as good as each day passes.

Excellent! The first time making this recipe I followed it exactly as written. I didn't care for the ginger in the pumpkin bread so I omitted it the second time making it. Absolutely loved it! I've received so many compliments. This will be my pumpkim recipe from now on.

Banana Cream Pie I

Excellent! I took the advice of others and only used 1/3 cup of sugar and 1/6 flour and 1/6 cornstarch. It turned out perfect! Not too sweet and the consistency was just like pudding. Tasted great! I'll be using this recipe from now on.

Excellent! I didn't think I'd like ground turkey in chili. I usually use ground beef. But this recipe was very good! Great flavor. This recipe will replace my current chili recipe. This is a keeper!
