This is a great recipe! Be sure to let the beans dry a bit (I let them sit in the strainer). I use red peppers, corn, grated (and then minced) carrots, minced onions, and/or whatever I have on hand. Instead of hot sauce and chili powder, I use berbere (an Ethiopian spice), for a milder but more complex taste. For the bread crumbs, I usually use some mixture of crumbled stale bread and crushed whole wheat saltines. Once these did not hold together at all on the pan, so I roughly chopped up the patty with my spatula and fried it with rice, and served it with sliced avocado for an amazing and quick variation.
