Slow Cooker Oats
I thought it was good, but should've read the reviews before I made it for the fam. I LOVE SCOs, so this was perfect for us. Consistency is so much better than the rolled oats. But the changes I would make (same as other readers) is to double the recipe to avoid the blackening (didn't do much for the presentation or the taste!), put the raisins in AFTER it's done, may try it on "warm" setting for a little longer instead of "low" to see if that helps the burning. And lastly, will try to make it with half of a kind of milk and water... almond, coconut or cow's milk for a creamier texture. But other than that, I loved it. Perfect for our Sunday mornings when we have to get out the door and get to church on time with 4 little ones!!

Feta Cheese Turkey Burgers
Absolutely fabulous. Incredible. If you like these types of ingredients/flavors, you will love it. The turkey is "neutral" enough (but still healthy) that the spices and cheese just pop. Will make it again and again.

Chicken with Quinoa and Veggies
Amazing, just amazing. My first try at quinoa and even my boys (5,3,1 & hubby) loved it. I thought for sure I would have to bribe them, but they just loved it (and me!). I am making it again tonight, but will make a few changes. First of all, I added chopped baby bella mushrooms and I can't imagine this dish without those. Incredible. But this time I am adding asparagus & yellow pepper to the mix. Instead of a traditional tomato, I halved some cherry tomatoes. So much flavor! I doubled the quinoa for my crew and will again. I also use more than 4 oz of the feta cheese--almost 8 oz for all the extra veggies I add. Instead of cooking the chicken with the veggies, I cooked it ahead of time by just putting a bit of evoo on it and then some garlic salt. Turned out fantastic. But this time I am going to use a rotisserie chicken and just add the meat in with the veggies like last time. I need to cut out time from this recipe wherever i can because it does take a while with lots of chopping. But it's so worth it! Not sure the lime made a huge difference, but will add it anyway just 'cuz I have it. This is definitely a keeper!!!
