Stuffed Shells I
DELICIOUS! This recipe is amazing and pleased both my SUPER picky husband and food striking 20 month old! Only complaint is that I cooked for 25 minutes like the recipe calls for, and the shells and filling were only luke warm. I put in for only another five minutes and they became dried out. Good thing we ate a majority of it before the second cooking! Next time I would definitely follow a fellow reviewer's advice and cook covered for 20 and then uncovered for 20. That way the insides are nice and hot and the tops don't get dried out. Also, I used 3/4 of a HUGE jar (3 lb and some odd ounce jar) of spaghetti sauce rather than just 26 ounces...the 26 ounces didn't cover the shells completely. Also, don't be afraid to really stuff them up...I used a 9x13 pan and was able to fill up three rows of tightly squished shells (using I would say 4/5's of the box of shells). I had to go back and add some filling to the beginning shells since I had some leftover! Next time I won't skimp so much on the filling! I also added some mozerella to the top and we all sprinkled parmesan over our servings on our plate. The taste overall was beyond delicious and really SO simple to make...this is only the 8th time I have made dinner in my entire life, so if I can pull it off and think it is easy, anyone can! :)

Cottage Cheese Chicken Enchiladas
Amazingly delicious!! So incredibly light and fluffy and tasty! Here are my comments on how I would change it next time. First of all, I put some garlic and onion powder in with the water when boiling the chicken breast for a little kick. Next, as a tip, when I added the taco seasoning and the water (package called for 3/4 cups water) the chicken absorbed it up right away therefor leaving nothing to "boil" as the package says. So I just mixed it all up and let it simmer for a few minutes instad of bringing it to a boil like the package said (since there was nothing left to boil!). Maybe I should have been using a chicken taco seasoning package, I bought a regular meat seasoning packet. Next, I would mix the sour cream/cottage cheese mix WITH the meat and onions before putting into tortillas. I found after they baked that it separated as I cut into my enchilada on my plate...cottage cheese fell to one side and meat stayed to the other. Not that big of a deal, you can just scoop them back up together, but the idea of seeing baked cottage cheese just sitting on my plate was a bit gross. I am going to try to mix the two together next time. Also, I was able to fill 16 small corn tortillas with meat and they all fit into a 9x13 pan - just in case you need a count or want to ration the meat correctly. Also, I discovered too late that if you microwave the tortillas long enough to where they are piping hot they won't "crack" and rip when you roll them up! One last thing I

Corn Pudding V
VERY delicious! I am NOT a cook, but was surprised how EASY this was to make and was a huge success with my incredibly picky husband! I didn't have a 2 quart dish so I made it in a square glass baking pan and even after 1 hour of baking the knife did NOT come out clean in the middle...after an hour 15 minutes I gave up and took it out and found that I overbaked it around all the edges. Not sure if it was the baking dish I used or if it is suposed to be a bit "pasty". Either way, don't be fooled with the knife not coming out clean, DON'T over cook it! Other than that drama, it was delicious and better than my mother's age-old recipe!!
