Blue Cheese Burgers

Fantastic! I can not believe my picky family not only ate these but LOVED them! I didn't have chives or dry mustard so I just used dried minced onions and spicy mustard. This is our new hamburger for the grill! I did what someone else recommended and added a few tablespoons of oatmeal and 1 TB of milk just to help retain moisture. Wonderful, juicy burgers!

Turkey Pot Pie I

FANTASTIC! We're not big vegetable eaters so I only put in the potatoes and a can of corn. I didn't have any parsley or oregano so I just used Italian Seasoning. I doubled the broth, flour, and milk so there would be plenty of sauce and I used the ready made pie crust. I had to practically beat the family away from the filling or I wouldn't have had any left for the pie! I have to make this once a week now (with chicken) or they start fussing!

Chicken Pot Pie IX

Fantastic! I shredded left over turkey into the broth mixture (instead of the flour mixture) and let it cook with the vegetables. I doubled the amount of broth, and the flour/butter for the roux, as well as the milk so we would have plenty of gravy. It was fantastic! people went back for 3rd helpings!

Oatmeal Pancakes II

We just "discovered" this recipe last week and have already made them 3 times! Huge hit with everyone, especially the kids. I have to make a triple batch so we have some to stick in the fridge in a ziplock bag. Yep, we will eat them right out of the fridge! I added 1 TBS of brown sugar. You can make several batches of just the dry ingredients and keep it in a ziplock bag in the fridge- 2cups of dry mix-then double all your wet ingrediants.

Oatmeal Peanut Butter Cookies

We were all craving something sweet so I went looking for a cookie recipe and found the perfect one in this one! The only change I made was cutting it in half (only had 1 egg left in the fridge!) and using all margarine since I didn't have any shortening. It made lots of wonderful cookies-crispy on the outside, soft on the inside. This will be a standard from now on! I used extra crunchy Jif.

Simple Country Ribs

FANTASTIC! Memphians are very pickey about their BBQ, we could talk all night about the virtues of dry BBQ over wet ~grin~ We're picky, but these are GREAT! I added a strawberry wine cooler to the mix and boiled for 1 hour. In the last 15 minutes I added some Season Salt. Once I put the ribs in the browning dish for the over, I cooked down the boiling mixture until it was the consistancy of BBQ sauce again...the best BBQ sauce you ever tasted. The ribs were fall apart tender. Will definitely make these again.....next week!
