Unbelievable Chicken

Delicious! My boys were complaining that there wasn't enough chicken to go around. They each had two pieces, for Pete's sake! Only marinaded for 2 hrs since I didn't have the 8 and there was still a great flavor. Will definitely double next time!

Rice Pilaf with Raisins and Veggies

Delicious! used the oven method and it turned out perfect. I want to experiment with saffron, slivered toasted almonds and a few more veggies next time. Definitely a keeper!

Chef John's Ham and Potato Soup

Layered Chicken and Black Bean Enchilada Casserole

Need a lot more spice, even though I added onions, garlic, and chili powder. The family liked it well enough to play with the recipe a bit. Ended up kind of runny, so we used tortilla chips to scoop it. That was a success.

Chocolate Chip Crispies

Great flavor and WAY easier than traditional rice krispy bars. The kids love them and nicknamed them Reeses Krispy Bars. It took a bit longer to get the mixture to boil in the microwave. I found it easier to stir the peanut butter mixture if you microwave it for a minute first, then cook on high for 2 minutes, stir, then a minute or two more. Delicious!

Cherry Cheese Pie I

I love this recipe! It's the way my mom used to make it, instead of the sweetened condensed milk, and is so much easier and quicker to make. Love it! I used light cream cheese and light whipped topping and it tasted great. Nice and fluffy light. Yum!

Pasta Pomodoro

Yum! This was delicious. Didn't have enough fresh tomatoes so used a can of them, which meant that it had more water, so I skipped the broth and added some chicken base instead. Tried it with kielbasa added and it was scrumptious! Thanks for the easy recipe.

Guam Fried Rice

YUM!!! I made this with lite Spam and added a bit of canola oil to cook the veggies in. Added the scrambled eggs that another reviewer suggested. My kids added chopped up dill pickles (something we add to our Nasi Goreng also) and I added Sambal Oelek (red chilepepper paste) to mine. We will definitely make this again!

Pumpkin Black Bean Soup

Surprisingly, this is a very tasty soup! I'm glad I tried it. I totally forgot to serve it with the sour cream. Doh! Most of the family loved it. The picky one said that it was ok. One suggestion, don't increase the pumpkin...it makes for a very strong pumpkin flavor. Thumbs up on the additions of cumin, coriander, and curry. I can see cilantro in this, too.

Bubble Pizza

We've made this dish for a long time and it's a total favorite! We mix the cut up biscuits in with the sausage, pepperoni & sauce mixture and then turn it into an ungreased 9 x 13. Super easy and a great hit with the kids.

Low-Fat Corn Bread

This was pretty good. I wanted it to have a bit more flavor, so I used the egg yolks too, and extra Tbsp of flour and cornmeal, and 1 extra tsp. baking powder. My husband (who is very picky) said he couldn't even tell that it didn't have butter in it! I'll be making this again.

Dirt Cake II

I don't understand why people are saying that the measurements are off...I had absolutely no problem with it. If you beat the pudding mixture for a couple of minutes like you would any instant pudding, this will set up perfectly. In fact, mine was a bit on the thick side! Don't change anything. My kids, nephew, and neighbor ADORED this cake! (I hid the worms under the top layer of dirt so that they would be a surprise.)

Campbell's® Tuna Noodle Casserole

I grew up with this recipe and it's still one of my fav's. We don't put the milk in and use corn instead of peas. My mom used to crunch up potato chips or fritos for the topping. Yummers! You can also top with french fried onion rings from the can.

Chocolate Chip Coffee Cake

Per the suggestions made, I used 1/2 c. applesauce and mini choc. chips. Yummy! The group I brought it to LOVED it! It took 35 min. to bake, maybe due to the applesauce added. Great recipe!

Pork Tenderloin with Creamy Herb Sauce

Very tasty! Loved the spices, but was a bit sweet. So the next time I make it, I'll leave out the carrots and add onion, garlic and mushrooms instead. Thanks for sharing the recipe. My husband loved it!

Grilled Asparagus

This is our favorite way to eat asparagus. Even my 5 yr old likes it! We leave off the salt & pepper and then add a bit of seasoned salt to taste. Yum!
