Best Italian Sausage Soup

We absolutely LOVED this soup!! I made it last night and we're having it again tonight. We NEVER do that! I added one more cup of beef broth, bag of spinach instead of zucchini and cheese tortellini, which I cooked separately and spooned into bowls before covering with soup. This is a definite keeper! Oh - Also I used bulk Italian sweet sausage instead of links. So much easier to eat with a spoon!

Spanakopita

I made this for Thanksgiving and it was SO good. Never worked with phyllo before or made spanakopita, although I've always loved it. The only thing I changed was that I used Gruyere cheese instead of swiss and only two boxes of frozen spinach. It was fantastic! I will be making this again for Christmas. Thanks.

Best Brownies

I made these brownies for Thanksgiving. I had never attempted to bake ANYTHING before, but my daughter loves brownies. This recipe was SO simple and delicious. Anyone can do it, even a beginner like me. By the way, my daughter took all of the leftovers home with her. Guess I'll have to make them again....

Hot Buttered Rum Batter

This was THE best hot buttered rum batter ever! I made it for an outdoor fall tailgate party on a cold Sunday. I scaled the recipe down to 50 servings, thinking I could freeze the rest for another day. Wishful thinking... it was gone before we knew it. There were a few creative people who added a scoop of vanilla ice cream before drinking and loved it. Guess I have to make more for the next party!

Hot Spiked Cider

This was wonderful!! Made it for a fall football tailgate party in a friend's backyard on a cold Sunday. The party lasted 12 hours and so did the cider! Everyone loved it and they haven't stopped asking for the recipe. We made batch after batch and kept them warm in a crockpot (on the low setting) with cinnamon sticks swirling around the bottom of the crock. I will definitely be making this for ALL of my holiday parties.

Honey Roasted Red Potatoes

Thought these would be too sweet for our taste, but I was SO wrong. What flavor! One comment...I cooked the potatoes for a full hour (at least) and they came out with nice, crispy skins. Perfect as a side dish for Thanksgiving. These potatoes will definitely be on MY menu.

Family Sicilian Sauce and Meatballs

I have always considered myself an excellent saucemaker. However, I made this sauce for my Sicilian husband and he absolutely loved it! I used a little more red wine than called for to get a little different flavor. I also made it a meat sauce instead of making meatballs. I added ground beef AND ground pork to the recipe, instead of the brisket. Unbelievable! The flavor of the sauce really stuck to the pasta (I used rigatoni), and the aroma throughout the house was great. People could smell it from outside. Obviously, I can't say enough. One of the best I've ever had!

Homemade Lasagna

This was the first time I ever attempted to make lasagna. It was unbelievably good. My husband, whose mother is Sicilian and a great cook, said that it was THE best lasagna he ever had. How's that for a review?
