Mexican Rice

I rate it about a 4.5 and only because the rice was not as done as I had wished. I followed directions and did not change anything except not adding corn. (oh I may have added an extra 1/2t of chili powder). Very flavorful. Loved by everyone and plates were completely clean! (not any left at all on plates). I decided to only top individual plates with cheese, as my daughter is not a cheese fan. I served with corn bread which went very well. The rice was a bit spicy, but not too much. I am not sure how to get the rice more tender. Next time may add a bit more liquid. Very tasty!

Blueberry Cream Cheese Pound Cake I

I thought this was quite good. I was about to make it when I realized that my daughter had gotten into the block of cream cheese. I only had about 5 oz left. I asked on the recipe buzz for suggestions and ended up adding about 3T of sour cream to it to compensate for the missing cream cheese. I was a bit surprised at how thick the batter was. I could not "pour" it into the pan, I had to spread it in the pan. I ended up baking it about 45-50 minutes. Was very good, and was gone within 1 day. (I did not coat my fresh blueberries with flour as the batter was so thick, I thought it would be fine. It was.)

Noodles Marmaduke

I decided to make the noodles separately because I read the reviews and didn't want to chance it. The sauce had a nice flavor. Husband loved it and would have rated it a 5. I thought it was ok, and would have given it a 3 or 4, so I settled on a 4. Nothing really wrong with the recipe, but it didn't excite me. I left out the lemon juice because it seemed odd. I was thinking later that it would have been good with a different type of meat besides, ground beef... maybe a sliced meat.

Spinach and Cheese Pie

Very very good... but I have a couple of concerns with the recipe. There was no way this amount of spinach and cheese would fit into a deep dish pie plate. I figured that ahead of time (thank goodness). I ended up making it in a 2q round casserole dish. Fit perfectly. Also, I had no idea how to use phyllo dough. My bad... but all in all, I used the amount stated for each layer and still had more than half a package left. Other than those concerns, no problems with recipe. I did tweek it a little. I added garlic to the spinach, mushroom, onion saute. (used baby portabellos). Then I added about 1/4 cup of Parmesan to the cheese filling. I added a dash or two of garlic powder to the butter when I melted it. This was a heavenly dish. Husband raved and had two helpings, which he never does. Thanks so much for the recipe.

Mini Ham And Cheese Rolls

Love Love Love these. Made them for dinner to try out something different. Hit with everyone. The sauce did seem a bit heavy on the poppy seeds, but that's only a preference. I was so happy to have leftovers! I brought two rolls to work the next day and microwaved them. They were so good! Need to put this on the menu rotation- easy and delicious! (oh and I used shredded swiss instead of sliced).

Bacon Ranch Pea Salad

I liked this quite a bit. My only complaint is not with the recipe. I decided to not boil the peas and instead to rinse them in hot water. Now I regret that, the peas were a bit crunchy, which some people like, but I don't prefer them that way. (this is why I didn't rate it lower, because it was my fault and not a recipe issue). I chose a higher quality ranch dressing and think that made a difference. I used red onion because I had it on hand, and it made it a little sweeter.

Oven Fried Parmesan Chicken

Very tasty! Used chicken thighs because that's what I had. Yum! Didn't add the parsley because I used Italian breadcrumbs and it seemed to already have them in it. (also oddly not a huge fan of parsley).

Overnight Meatball and Pasta Casserole

Very good. Rich and filling. I searched at two stores for mini lasagna noodles but was unable to find them. Ended with a different shape. Since recipe calls for only 14-15oz of jarred sauce and most sauces are much bigger, we went with a gourmet sauce - Wolfgang Pucks 4 cheese as this was closest in size. Mixed up the ingredients last night, let sit all night and all day in fridge. Before baking I remove and let the glass dish come to room temp so it doesn't shatter in the oven. Make sure you do that. Came out great. Family liked a lot, but said they aren't big meatball fans (I am). Wondering if there would be a way to make it with italian sausage instead. I LOVE LOVE LOVE how easy this is! and tasty to boot!

Chicken Caesar Pasta

Delicious! I baked chicken breasts, cubed and used in this dish. I believe my chicken came out to closer to 3 cups (instead of 2). A lot lighter tasting than I expected. Love the crunch of the croutons. I would have never thought of that. They are so garlicky and yummy. Great job semigourmet, another winner! To boot, family also enjoyed!

Corn Fritters

Tasted like carnival food to me. Yum! They were light and fluffy. I was surprised how they puff up once in the oil. I did them in a deep skillet. I did add more sugar, I think about 3 T. It was perfect. I tried them sprinkled with a little sugar once done and they were even more tasty. Will make again I'm sure.

Spinach Brownies

Been making these for years, but forgot to review them. I always double the recipe because I love them so much! Because I double it, I use half sharp cheddar and half mozzarella. I do sautee the onion a bit first. I use frozen spinach and squeeze it really well before adding. These are heaven to me! I love to take them for lunch the next day.

Eggplant and Ground Beef Lasagna

I made a few changes. I used jarred spaghetti sauce instead of canned tomatoes to get more flavor. I used the same amount of sauce as I would have used in tomatoes. It needed more sauce (as someone else also mentioned). So I had to add more. The other change I made was to use a different shredded cheese. I opted for an Italian 5 cheese blend as husband doesn't care for cheddar. It was a nice lasagna. However, the eggplant did not get cooked. (even with increasing the cooking time) I sliced it thin too. Next time I may either cube it and cook with the beef and sauce, or may pan fry it slightly before baking.

Cindy's Beef Tips

My family loved this. I thought it was pretty good. I did need to thicken it a bit at the end. Served over mashed potatoes. I used about 1.2 pounds of stew beef and it was plenty for 3 of us. I also used fresh mushrooms (cant remember if it calls for canned or fresh).

Chicken Florentine Casserole

Loved the sauce! I wish I had cubed the chicken like some others said they did. I baked it all together and didn't prebake the chicken. Sauteed fresh spinach with the mushrooms. The spinach and mushrooms with the sauce was divine, I could have eaten a bowl of that alone. Next time I make this will have to try and cube the chicken or prebake it. It just didn't get done the way I wanted it to.

Zesty Slow Cooker Chicken Barbecue

I used 7 frozen chicken breasts and cooked overnight for a potluck the next day. I did not add the brown sugar because I used Baby Ray's Brown Sugar and Hickory BBQ sauce. I only put in 1 T of Worcestershire sauce and of course 1/2 c. dressing. When I woke in the morning it smelled great in the house. Chicken was very easy to shred. There was plenty of "juice" and I let it soak it up till serving time. The group at the party really liked it. Nice and easy, and very tasty. Think I will try this out as a regular in my menu rotation.
