Slow Cooker Spicy Chicken

Yum! Turned out great! I used bone-in thighs (3) that I wanted to use up. Used a combo of regular chili powder and ancho chili powder that I had around. I did add a bit more of both than called for, as when I tasted it an hour before serving I wanted it kicked up a bit in flavor. Due to some time issues, mine cooked a lot longer than expected, but it was awesome anyway! De-boned and shredded, which was so easy. Served with soft tortillas and hard shells along with typical taco fixings (sour cream, sharp cheddar, lettuce, tomato, onion). My daughter loved them, despite her fussiness and prejudging.

Apple Pie Muffins

Best muffin I ever ate! Not too sweet. Made 14 large muffins. I filled to top as instructed and yielded beautiful muffins.

Maple Pecan Shortbread Squares

Very good, but my only complaint was that the bottom crust got soggy after 24 hours or less. I did add a bit of maple flavoring per other reviews. These were very good.

Lawn Mower Salad

Delicious! I have to admit, I have never been one for broccoli slaw, but after seeing all the raves about this, had to try it. Well folks... I had three servings! Yes, three! Only change I made was to use vegetable oil, as I didn't have canola. I didn't have sunflower seeds so I omitted this time. It was so good! My daughter had a friend over for dinner, and she had several helpings too (and she is a teenager!). My grandma raved too! A bit hit! Thanks Molly! Will be making a lot for sure!

Maple-Garlic Marinated Pork Tenderloin

So good! Used a 1 pound tenderloin for the three of us, and it was a perfect amount. I marinated all day. I noticed I couldn't taste the sesame oil in the finished dish at all. Might think about increasing it a bit next time. My daughter, who is getting pickier by the day really liked it. I baked mine at 375 for about 45 min. Don't overcook it. Boiled the marinade a good long time and serve as a sauce to pour over individual plates. Will be making this again soon! Tenderloin was so tender. Try it!

Antipasto Squares

Made these for a party and YUM! Appears that now they make the crescent rolls packages smaller. I pressed and stretched it to make it fit a little easier in the pan. Used smoked deli ham, as boiled ham seemed yuckie to me. Only had half the provolone I thought I had, so added some shredded mozarella to that layer. The roasted peppers make this dish, so don't leave them off. I served room temp and people loved them. Note, they don't seem to reheat well in microwave, but toaster oven worked fine for a few leftover bites for me the next day.

BLT Dip

Not as good as I hoped. I doubled it after reading all the rave reviews and had so much left after a party I had to throw it out. Only made a few small changes, added a little bit of sharp cheddar (shredded) and a half a brick of softened cream cheese (to the doubled batch). I ended up stuffing cherry tomatoes with some of it, and they were barely touched. The rest I served with toasted pita chips and baked wheat thins. I liked it better with the wheat thins. Don't know why, but not my cup of tea. Sorry, probably just a personal preference. Nothing wrong with recipe.

Macadamia Clusters

These are so tasty! One thing that no one mentioned is that the white chocolate will seize when you add the orange zest. It has water in it, which seizes it. At first I thought I did something wrong since no one mentioned this. It worked out fine, as I just sort of used my hands to mold little candies instead of dropping them. I drizzled them with dark chocolate for a nice presentation. I made these for a party and they dissappeared. I couldn't stop eating them myself.

Ultimate Steak Sandwich

Five stars for the taste. Like others have said, the garlic mayo makes this sammy! I did use more worsteshire than called for as well as added some fresh ground black pepper. Left out liquid smoke. Next time, I believe I will do the onions (and mushrooms) separately. I think they needed longer than the steak did. Also, I know very little about cuts of meat, I found "top round" steak that was thin, so I used that. Kid asked me to make again!

Spinach and Bacon Quiche

This was so good! Had my 13 year old help make it, which had her more invested in it, and she loved it (despite it having spinach in it! The only change I made was to only use about 1/2 pound of bacon. She asked if we could ditch the usual quiche recipe I make and use this recipe from now on. It's a little more time consuming than my usual ham and cheese, but oh so worth it!

Perfect Ten Baked Cod

I loved this dish. My first time making fresh fish. I opted to purchase Ritz Garlic Butter crackers for the topping, and it was so good. Fish came out perfect. The only thing I could say that is negative is that the topping was a bit mushy under the crunchy part. It mattered not to me, cause it was so delicous. This gives me some confidence to cook fish. Thanks.

Take The Night Off Slow Cooker Pineapple Chicken

So excited to be the first to review this! I loved how easy this recipe is. The sauce was really good and the pineapple come out so yummy. I used two large full bone-in chicken breasts to serve three of us. The only thing I found is that the chicken was dry. I would suspect my crockpot runs hot. It didn't matter to me though, because of the lucious juice that I soaked my chicken in. I did not thicken the sauce, but I suppose some might want to. I served with a 5-grain rice blend and no leftovers. Chicken was all gone. Thanks nanny. Next time I will just be aware my slow cooker is a tad warm and cook less time.

Pork Tenderloin with Creamy Dijon Sauce

I liked this a lot. The rest of the family only liked it so-so, but since I'm rating, it gets a 5. I only used one tenderloin (about 1 pound) because it was just three of us. Followed recipe exactly. Cooked on low 7 hours and it was falling apart delicious. Served with mashed taters for the sauce.

Lots of Chocolate Cherry Cookies

Awesome cookies!!! I used Hershey's Special Dark Cocoa. These are devine. I liked using the instant coffee.... mixed into the egg and vanilla to ensure it disolved, then into batter. Mine baked for about 11 minutes. Had to make two batches these are so good! Thanks jrbaker!

Butterfinger Chunkies

Awesome cookie! I found a bag of butterfinger bites instead of full sized bars. The store didn't have "fun-sized" for some reason. The bag of bite sized pieces was the exact amount needed (about 10 oz). I used parchment paper on the sheets and it worked perfectly. I let cool several minutes and had no problems transferring them. These are delicious and look pretty neat. They come out of oven somewhat puffy, but as they cool they flatten. One batch made about 36 cookies (medium sized). Thanks for this recipe!

Roast Beef Panini with Caramelized Shallots and Roquefort

Pretty good. I liked this concept. My horseradish cream did not come out very strong. Not sure why, I used fresh horseradish root and grated it. The panini did not get as crisp and marked as I hoped, my first time using the panini press. The taste was very good however. Next time will use a less crusty bread. (the bakery suggested I use one with a lot of cunchy exterior for my panini, which I ended up not liking).

Easy Slow Cooker Meatballs

I really liked this method. It was easy and my meatballs were not greasy. I used a 90% grade of beef. My only criticism is that the meatballs were not very flavorful. I even added 1 t. Italian seasoning. I would definitely make again, but doctor up the meatballs more next time. The house smelled devine all day!

Bowties with Italian Sausage in a Cream Basil Sauce

Delicious. Used a combo of sweet and hot italian sausage and then omitted the red pepper flakes. Could have used more tomato (I used fresh). Liked the fresh basil in the sauce. Yum!

Asian Lettuce Wraps

I liked this filling. I upped the sesame oil as it needed more wetness. My wraps completely fell apart. I used boston bib lettuce but it was a flop (litterally). Makes a lot of filling.
