Cranberry Swirl Coffee Cake

Delicious! However, mine took a lot less time to bake than stated. I used a 10 cup bundt ban. It could be that the pan is thin, but overall I think it was done in about 40 minutes (possibly even 45). I used the toothpick test and it showed it done that early. I did use the canned whole cranberry sauce, while many other reviewed used homemade sauce. One suggestion is to take the canned sauce, put in a bowl and mush it up really well. This helps make it easier to put in the batter without it touching the sides of the pan. I just love the tang of the sauce in this cake. Everyone here loved it, even picky daughter and picky grandma!

Garlicky Tortellini Soup With Sausage, Tomatoes and Spinach

Wonderful soup!!!!!! I loved it!!!!! I only had 10 oz of sausage and we all felt it was plenty. I decided to put tomatoes in food processor a bit as I don't like chunky tomatoes in my soup. Loved the garlic flavor it was just right! I used a bag of refrigerated tortellini instead of frozen. I opted to cook separately in water then add to soup so it didn't soak up the broth. I added a bit of Italian seasoning, but husband said he thought I should have not done that. He liked it, but would have liked it better if I didn't add it, however I liked it with it! So good! Thanks Christina, awesome recipe!

Fancy Pants Hamburgers

Yum! The sauce was my favorite part as it got cheesy goodness in it. I opted to add the mushrooms and I'm so glad I did as they added a lot to it. Very good on the rice. Thanks Sherri's husband and Sherri!!!

Mini Cheesecakes I

Delicious! I used 1.5 cups of the vanilla wafers crushed in my food processor with 1/3 cup melted butter and 2T sugar for the crust. Pushed 1 teaspoon of this into each mini muffin paper cup. Filled with the cheesecake filling and baked for 13 minutes until they spung back when touched. Perfect! Topped some with blueberry filling, some with cherry pie filling and some with melted semi-sweet chocolate that I swirled on top. Brought to a Super Bowl party and were well recieved. My personal favorite was the blueberry. Per other reviews make sure cream cheese is room temp, and when mixing be sure to add each ingredient one at a time whipping well in between. Thanks for this awesome recipe!

French Onion Soup

I thought this was a wonderful soup! Loved the spice combo.I used two of each onion type (red, yellow and white) My onions cooked about two hours, but I wish I had had time to let them go longer. (Poor time planning on my part). My onions were not quite the color I think they should have been at the two hour mark, but had to go with it cause dinner was already very late. I used boxed stock and therefore my soup was missing some of the depth of flavor I wanted (also probably since the onions were not dark as I wanted) - homemade stock would have been perfect. So I added one teaspoon of granulated beef bouillon. This did the trick. Wonderful! I can't wait to have some today (the next day) as I'm sure it's even better! Thanks Don!!!

Sausage, Peppers, Onions, and Potato Bake

I rated this a five as my family ate a ton of it, which in my book equals a five (plus no one complained, and that's a miracle!). I used three peppers, one yellow, one orange, and one red... they were super sweet. My potatoes took longer than stated in the fry pan to brown, but that was fine- just wanted to be sure they were cooked through. I was surprised that despite using wine, there was no wine taste at all. (I like wine in my food). Served with a side salad. Yum! Thanks!

delicious slow cooker beef burgundy

I really liked this. The only issue was our meat was dry- but I think it was our cut of meat (stew beef). The sauce was WONDERFUL!!!! Absolutely delicious! I added a bit of chopped onion to the sauce. Thanks!

Delicious! I loved the crunch of the graham and toasted marshmallows, and the contrast with the ooey gooey brownies. I did not cook quite as long as stated after adding the toppings.

Cashew Chicken with Water Chestnuts

I just loved this! So simple. I used red bell pepper instead of green as I think it is sweeter, and was more attractive looking to me than green. For the sauce, the only change I made was to add 1 Tablespoon of Hoisin Sauce to it and omitted the hot sauce. Did mince some garlic into the sauce. So good! Could have eaten the whole pan myself. Served over rice with homemade chinese fried noodles and duck sauce. Perfect meal.

Eclairs II

Husband wanted eclairs for his birthday dessert so I decided to try my hand at making them from scratch. This recipe is quite easy, and they came out really well. It does require some time to get all the steps in. I followed others idea, and piped the filling in (used a ziplock bag). It was a messy job, but came out good once I got the hang of filling them up. The filling was light tasting and less heavy than a custard I am used to. My only complaint was the "frosting". It looked fine until I cooled it a bit to frost and then it became less smooth. Still it tasted great. If I can find a frosting I like better I may do that next time. Fun to make these! Thanks!

Ellie's Hot Crab Dip

Wonderful!!! I used more horseradish probably about double. I tasted after 1 tsp and decided I wanted more, also gluggled in a bit more hot sauce. I made this for our weekly appetizer dinner and this was by far my favorite one! Ellie you are a saint! (I tried it with tortilla scoops, garlic flatbread crackers and Ritz and decided I liked it best with Ritz, FYI). Thanks Ellie!

Asian Glazed Chicken Thighs

I loved this chicken, but the sauce was way too spicy for my liking. I used chicken thigh cutlets and let it marinade most of the day. The chicken was really good, and I ate two pieces (which is unheard of) Because these were cutlets, they only took only a fraction of the baking time. I think it was so spicy because of the "Asian chili garlic sauce". It is very spicy. I knew that 3 T. would be way too much, so I only used 1, and used 2 of an Thai Sweet Chili Sauce I had. I will say, that despite my lips burning when I ate the sauce on my rice, and my decision to not eat the sauce after that experience, MY FAMILY loved it. They obviously like heat.

Apricot Muffins

I really like these muffins. They are light and have a wonderful buttery taste. I didn't want to tweek or add anything. I like the simple nature of them and the clean flavors. I found that they didn't the whole 15 minutes baking time, so I watched until they were done.

Bob's Stuffed Mushrooms

Okay but not terrific. The only change I made was to add some of the mozzarella to the stuffing. After baking a bit I also topped them with some too. I was able to fill about 25 med-large mushrooms and had a bit of the stuffing left. I also reduced the butter I used to drizzle over them a little.

Brown Sugar Smokies

These are way too good! Used maple bacon and secured with toothpicks. Baked until crispy. Gone in no time. Update!!!!! 10/19/14 Made a new version using Johnsonville Mild Italian sausage! Amazing! Cut each link in 4 pieces. Works easiest if links are very cold. Cut bacon strips in thirds. Wrap bacon a round sausage pieces and secure with toothpicks. These cook much longer as the sausage isn't precooked as the mini hotdogs are. Lined a jellyroll pan for easy cleanup. Mine cooked about 35-40 minutes. Used about 1 cup brown sugar per recipe. Yum! Try it!
