Baked Potato Casserole

I halved this recipe because it seemed like a lot for my family. I used butter potatoes and it turned out wonderful. I made this to go with our Easter ham and it went well. Also used fresh chives instead of dried ones (recipe doesn't say which type) and the freshness of them was nice in this dish. Had requests to make again and they hadn't even finished what was on their plates!

Pasta with Asparagus

I wasn't impressed, there seemed to be very little sauce. However, my family loved it. They would rate it a 5. Just wasn't totally my cup o'tea.

Tina's Shortbread Chocolate Chip Cookies

Very good. I did add 1 teaspoon of vanilla extract per recommendations. I omitted the nuts because my daughter can't have them. Nice and buttery. I would definitely suggest you leave them on the cookie sheet to cool a few minutes before transferring to a cooling rack. Otherwise they fall apart and break.

Chicken Asparagus Roll-Ups

Wonderful! Followed the recipe, except used a little less black pepper. Family loved this one. I particularly liked the lemon flavor. Not too strong, not to subtle. Will make again!

Baked Teriyaki Chicken

Delicious! I doubled the sauce and per recommendations of others used half brown sugar. Let me say that I tried the sauce after it came to boil in saucepan and I did NOT like it. It seemed so acidic. It definitely changes when cooked with the chicken. I had mine bone-in thighs skin down for first half and then turned to skin up for a crisp yummy glaze! Will make again for sure!!!!!

Fried Chicken Tenders

These were really good. The ckicken was really tender and moist. I did add some garlic powder to the breadcrumbs. Deep fried for about 5-6 minutes (but my fryer may have been hotter than 375). Will make again.

Creamy Rice Pudding

Rating 5 for taste. I used rice that was left over from dinner and was in the refrigerator. Don't know why but it didn't get thick when I added the liquid. Added some flour to thicken and it was just fine. Yummy with raisins too.

Applesauce Bars

Used chunky applesauce and followed recipe exactly. Family ate these up in a few hours flat! Didn't put on icing because they ate them up before I could get it on!

Seven Layer Taco Dip

Very good, but I left out the lettuce and olives because of personal preference. I tried this dip a few ways... one with scoops tortilla chips and also with fritos. I liked the fritos myself, but my husband liked it with tortilla chips. We also tried it cold and hot. Preferred it hot. This makes a pretty large dip. Will make again.

Spinach Cheese Ball

This went over really well at my Thanksgiving. I followed the recipe exactly, except i didn't put chopped nuts on the outside. We all couldnt stop eating this stuff! I like it best on wheat crackers.

Cranberry Muffins

Recipe states to fold in sour cream twice.... not sure why! Batter came out really thick. Muffins are fair- not the best. Cooked at 375 for 25 minutes. Also only added 1/4 t nutmeg and 1/4 t cinammon.

Three Packet Slow Cooker Roast

I really liked this. Its very easy and I was surprised by how good the sauce was in the pot after cooking all day. I didn't have internet when the recipe needed to get started so I couldnt remember what to mix the three packets with, so I used beef broth. I served with mashed potatoes. This was a winner in my opinion.

Barb's Pumpkin Chocolate Chip Muffins

Okay, but not fabulous. The second day they were very dense and solid. I used 1 teaspoon of pumpkin pie spice instead of nutmeg. The cook time was way off.... mine only needed about 20 minutes.

Sweet and Sour Meatballs

Pretty good. I added one personal sized cup of pineapple tidbits to the sauce (with juice). Served over white rice. 11 year old daughter loved it! I thought it was better the second day as leftovers.
