Caesar Chicken Pasta

Reviewed: May 28, 2012
Delicious! I baked chicken breasts, cubed and used in this dish. I believe my chicken came out to closer to 3 cups (instead of 2). A lot lighter tasting than I expected. Love the crunch of the croutons. I would have never thought of that. They are so garlicky and yummy. Great job semigourmet, another winner! To boot, family also enjoyed!

Corn Fritters

Tasted like carnival food to me. Yum! They were light and fluffy. I was surprised how they puff up once in the oil. I did them in a deep skillet. I did add more sugar, I think about 3 T. It was perfect. I tried them sprinkled with a little sugar once done and they were even more tasty. Will make again I'm sure.

Chicken with Dijon White Wine Sauce

Nice dish. Doubled sauce, but in end realized I didn't need to. Simple and tasty. Served with white rice, sauce on top, and steamed asparagus.

Wonderful! I put it all in a 9x13 instead. Other than that, followed exactly and was so good! Family raved! So simple, inexpensive and delicious! Thanks semigourmet!

Spinach Brownies

Reviewed: May 12, 2012
Been making these for years, but forgot to review them. I always double the recipe because I love them so much! Because I double it, I use half sharp cheddar and half mozzarella. I do sautee the onion a bit first. I use frozen spinach and squeeze it really well before adding. These are heaven to me! I love to take them for lunch the next day.

Eggplant and Ground Beef Lasagna

Reviewed: May 6, 2012
I made a few changes. I used jarred spaghetti sauce instead of canned tomatoes to get more flavor. I used the same amount of sauce as I would have used in tomatoes. It needed more sauce (as someone else also mentioned). So I had to add more. The other change I made was to use a different shredded cheese. I opted for an Italian 5 cheese blend as husband doesn't care for cheddar. It was a nice lasagna. However, the eggplant did not get cooked. (even with increasing the cooking time) I sliced it thin too. Next time I may either cube it and cook with the beef and sauce, or may pan fry it slightly before baking.

Cindy's Beef Tips

Reviewed: May 5, 2012
My family loved this. I thought it was pretty good. I did need to thicken it a bit at the end. Served over mashed potatoes. I used about 1.2 pounds of stew beef and it was plenty for 3 of us. I also used fresh mushrooms (cant remember if it calls for canned or fresh).

Chicken Florentine Casserole

Reviewed: Apr. 28, 2012
Loved the sauce! I wish I had cubed the chicken like some others said they did. I baked it all together and didn't prebake the chicken. Sauteed fresh spinach with the mushrooms. The spinach and mushrooms with the sauce was divine, I could have eaten a bowl of that alone. Next time I make this will have to try and cube the chicken or prebake it. It just didn't get done the way I wanted it to.

Zesty Slow Cooker Chicken Barbecue

Reviewed: Apr. 28, 2012
I used 7 frozen chicken breasts and cooked overnight for a potluck the next day. I did not add the brown sugar because I used Baby Ray's Brown Sugar and Hickory BBQ sauce. I only put in 1 T of Worcestershire sauce and of course 1/2 c. dressing. When I woke in the morning it smelled great in the house. Chicken was very easy to shred. There was plenty of "juice" and I let it soak it up till serving time. The group at the party really liked it. Nice and easy, and very tasty. Think I will try this out as a regular in my menu rotation.

Lemon Bread

The only issue I had was getting it out of the loaf pan. Mine would not come out. I finally got it out in pieces, which made putting the glaze on it weird. (I did grease the loaf pan). Otherwise, nice taste.

Breaded Chicken Fingers

I thought these were great! I made the liquid for them to soak in early, so I think they may have been in the buttermilk for about 5-6 hours. The only minor change I made was to use garlic salt instead of regular salt in the coating. Very good recipe. Will have to make again. Soon!

Carrot Cake III

Reviewed: Apr. 11, 2012
Very good! Nice and moist. I used a food processor to shred my carrots and it worked well. I was a bit over 3 cups, but it didn't make a difference. I think it may have been good with some raisins in it. When I made the frosting I only used 3 cups powdered sugar because we don't like things overly sweet here. The frosting was divine! Cake was a big hit at Easter!

Garden Penne

Tasty. Like others said, makes a lot. I opted to use a different shape pasta - ziti (personal preference). Kept the veggies the same. I did notice it too a bit longer for my veggies to get cooked than the recipe states. (no biggie) I made the mistake of only buying one 14 oz of diced tomatoes so I had to work with that. It definitely needed more like the recipe calls for. Opps. The veggies gave the recipe a bit of a sweet flavor in my opinion, which was not bad at all. Nice dish. Thank you chicklet!

Flavors were a little strong for me. I tried to tone it down with some broth but it didn't work. Husband liked it, but not a favorite of mine. Sorry Lisa J. Thanks for posting, I think I'm just used to the one I normally make.

Glazed Chicken Wings

Reviewed: Mar. 24, 2012
Nice glaze. I baked my wings for 45 minutes unglazed with a generous sprinkle of garlic powder and garlic salt. Mixed up the sauce using 1/4 cup of soy sauce, 1/2 cup (per recipe) of BBQ and nearly a 1/2 cup of honey. Spooned over the wings and baked about 15 minutes. Turned and put on more sauce, baking for about 10 min. They were soooo tender and fell apart. One tip: Make sure you use aluminum foil on the pan. If I hadn't I think the clean up would have been a LOT of work due to the sauce. Also, I liberally greased the pan, and believe that helped the wings from sticking too much (although they did stick some). Will make again for sure.

Mie Goreng - Indonesian Fried Noodles

Reviewed: Mar. 21, 2012
Big hit with family! Did not use the Indonesian soy sauce due to my budget. Still had great flavor. Next time will cook the veggies just a tad longer. I bought a bag of coleslaw mix to get cabbage and carrots. The shred was a little small, but worked well enough without having to buy a whole cabbage.

Portobello Bellybuttons

Pretty good. I doubled the sauce ingredients because of other reviews. Used frozen tortellini and they were very good. I also added a bit of italian seasoning and a bit more basil. You have to like mushrooms to enjoy this one (which we do).

Crispy Herb Baked Chicken

Reviewed: Mar. 3, 2012
I loved this recipe. I never would have thought to use potato flakes, and actually made my family guess what the coating was. (they did not guess it). I used chicken thighs because of the price and hubs prefers. Was nice n crispy. I did add about a teaspoon of chicken "rub" to the potato mixture to jazz it up a bit. Yum!
