My cooking triumphs
Anytime I can make a veggie-filled meal without complaints from the peanut gallery :) Also, ganache filled chocolate cupcakes with peanut butter frosting.
My cooking tragedies
Making cupcakes from scratch for the first time. I don't know what happened, but they exploded in the oven from the center.

Burmese Chicken Curry (Gaeng Gai Bama)
One tip: once you're done frying the shallots/onions, you'll need to transfer it to a bowl - might as well save some time and fry them while the curry is simmering. This way you'll still have the same amount of dishes afterwards. The only things I did differently was to substitute coconut milk for the water (about half a can for simmering the chicken and half for afterwards) and used carmelized onions instead of shallots. The curry that you use will make a huge difference in the taste - I used Thai red curry paste and Indian mild curry powder.

Kidney Beans and Corn
I really liked this concept, however, I eliminated the spices and just poured some leftover chipotle pepper in adobo sauce. It was fantastic! I skipped the rice and just ate it plain

Spinach Quiche
This is a keeper! Even my brother who hates anything "with veggies" loved this. Next time I will try it without the crust as it was a bit sweet for our taste although that could have been the type I used. I also just used fresh spinach and wilted it.
