Lentil Soup III

Such an excellent recipe. I appreciated the short list of ingredients and very little preparation. The soup is delicious, and even better the next day.

Mom's Baked Macaroni and Cheese

Excellent and simple recipe. I like this because of its small list of ingredients and the fact that it has no eggs. I use lots of coarse ground pepper to spice it up.

Pasta e Fagioli I

Reviewed: Dec. 19, 2002
What an excllent soup. I like it because it stays true to the original "rustic" character of pasta e. fagioli in that it does not add a lot of extraneous ingredients (meat, carrots, etc.). It is also very simple and quick to make. I use garbanzo beans instead of cannellini beans because I can never find the latter at the store. I've made this three times now and it gets better every time. I highly recommend it.

Chili con Carne III

Reviewed: Nov. 24, 2002
Very fast and easy to make. I agree with other reviewers in that this chili is not very spicy. I added several dashes of Tabasco and some crushed cayenne pepper to fix it. The only real complaint I have is that the chili was not "soupy" enough; it was very chunky and was better eaten with a fork. I think added a little bit of water next time will make it better. Overall, very delicious and I will make it again.

Creamy Italian White Bean Soup

Reviewed: Mar. 31, 2001
A delicious recipe. I do not own a blender; extracting the two cups of vegetables and mashing them into a paste with a fork worked well instead. I am a novice cook and this recipe yielded extremely tasty soup the first time. I was thinking of adding a little Worstershire next time. This would balance the hearty bean flavor with some tartness.
