Big Soft Ginger Cookies

If you like ginger cookies, you'll LOVE this recipe and if you don't like ginger cookies, this may be the recipe that changes your mind. I followed the recipe exactly, except for a repeated suggestion from many reviews, to substitute orange juice for the water. By rolling the uncooked ball of dough in sugar, it produces a crackly exterior that seems to really highlight the soft and chewy interior. I also opted to make a simple glaze of powdered sugar and milk, which I drizzled over the cooled cookie. Perfect. This will be integrated into my Christmas cookie lineup.

Princess Cookies

Wow, this is an excellent recipe for lemon cookies! I followed the recipe exactly and decided to follow the suggestion of rolling the ball of uncooked dough in sugar. After baking and tasting the cookie, I then decided to follow the other suggestion of making a glaze with fresh lemon juice and drizzling it over the cooled cookies. Bingo! Thats the winning combo! The sugar gives it a slightly crackly texture, and the glaze gives it that additional zing of lemon. This recipe is a keeper.

A nice, simple marinade that has ingredients that are always in my pantry. I used dried parsley and bottled lemon in place of fresh, and it was still tasty.

Creamy Coleslaw

After reading the reviews for this recipe, the first time I made this, I followed the advice of many people and only used half an onion. It was tasty, but still a bit too strong. The second time I made it, I used a quarter of a red onion and it was perfect. Red onions can vary in size, so depending on how big or small it is, it could be half an onion if its a small one or a qurter if its a large onion. I also used rice wine vinegar (again at the suggestion of some reviews) and added some salt and pepper and honey to taste. I've now made this recipe 5 times with the small tweaks I mentioned above and its always a show stopper. I even had someone tell me that they usually hate cole slaw, but found this version to be palatable.

Marinade for Steak I

Meatball Nirvana

All I can say is WOW. What a great recipe. I followed it exactly and I wouldn't change a thing. However, that being said, it is a very robustly flavored meatball recipe. I like oregano and italian sesasoning, but some palates may prefer to cut back a bit on those spices. Me? Its perfect.

Tres Leches (Milk Cake)

Just so there's no misunderstanding here, I used a boxed white cake mix and cool whip topping instead of the homemade cake and whipped cream the recipe called for. However, I did use the ingredients for the milk mixture that you pour on top and I followed one of the reviewers suggestion to remove the skin on the top of the cake while its warm to make absorption of the liquid easier. I also made a fruit topping of blueberries, mango's and strawberries, dressed in honey and lime juice, which I served on the side (not everybody likes fruit). I know that it almost isn't even the same recipe, but it worked out so well that I wanted to let everyone know that there is an easier, quicker way to make this. The cake was an absolute HIT at the party I brought it to. People even went back for seconds!

Eastern North Carolina Barbeque Sauce
