Golden Sweet Cornbread

Just made this recipe as cornbread muffins and it was easily one of the best cornbread muffins I've ever eaten... and I know my cornbread! Also I used Gluten-Free all purpose flour, and it worked just perfectly! As others suggested, I cut the sugar to 1/2C but everything else I kept the same. Baked them at 400 for about 16 minutes. This recipe is definitely a keeper!

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

One of my favorite recipes! It's great as is, but I like to make a couple of modifications, to make it healthier and quicker. I bread the fish as it says (which by the way I use tilapia filets, 1 per person, cut into 3rds), then bake for about 20 minutes at 350, turning once in the middle. Sometimes I have to cut the temp up close to the end. They don't get as 'pretty' this way, but still taste great! Also, our local Publix sells a Chipotle Mayonnaise, and it to me is just as good as the homemade, plus much easier. Only downside is you can't make that lower fat. Last thing is I don't mix up the slaw, but instead just layer the sauce/coleslaw/cilantro in the taco which is a time & dish saver. Like others said, DON'T skip the panko crumbs, honey-lime sauce or the mayo! (And if you do, don't come back to give it a bad rating!) Then eat and enjoy, imagining you are on the beaches of the Baja!

Chocolate Cobbler

Oh. My. Goodness... this is maybe the best dessert I've ever eaten, let alone made! Awesome! The only thing I changed was I couldn't bring myself to add a whole other cup of sugar on to the top, so I used maybe 3/4 a cup for the topping, which was just fine! This is DELICIOUS with ice cream on top. Not too rich, but plenty chocolately! You must make this. Now. Get to work!

Colleen's Slow Cooker Jambalaya

Wonderful!!!! I never thought such good, authentic jambalaya could be so easy! The main thing I did different was omited the shrimp (so I added a little extra chicken). I also cooked some brown rice the night before when I was preparing everything (I left it in the crockpot in the fridge over night) and stirred the rice in with 10 min to go. I used a green, red and yellow pepper pre-diced mix and used hot sauce instead of chili pepper. This is one of my favorite meals I've ever cooked!!! Thanks so much for sharing!

Mom's Buttermilk Pancakes

I guess this is proof that just because a recipe gets good reviews, that doesn't mean it will be good for me! After reading the reviews, I figured that a couple of minor changes they suggested would be ok. We had no buttermilk, so I did the 1 cup milk to 1 T vinegar, which seemed to work well. I also added a little bit of sugar. For some reason my batter was very thin and the more I stirred, the thinner it seemed to get. Also the places where there were still lumps were VERY salty! Enough syrup can disguise that probably, but I tend to go light on it. Not sure what exactly went so wrong, but these didn't work well for us :(

French Toast Corners

We weren't really crazy about this. First, the butter ended up burning my pan by the end of the batch, we probably should have used pam from the start. And the taste was just average, nothing special. I added some sugar to the mix, but still was kind of bland in my opinion. I don't like a lot of syrup, but to give these taste I had to load it on. I'll try something else next time, sorry!

Easy Biscuits

I made a lot of modifications to this recipe and they turned out pretty good! My husband seemed to love them. Here are my changes: I only had all purpose flour, so I took another reviewers suggestions and used 1 Tb baking powder and 1 tsp salt (I didn't have any fresh baking soda). I also substituted 1/2 C wheat flower to make them a little bit "healthier," which worked well. Since other reviewers complained about lack of flavor, I substituted 1/4 of the shortening for butter and added a Tb of vanilla extract, which made them smell really good. With a bit of honey on the finished biscuits, they tasted just right! Finally I mixed all of this up in my cuisinart food processor, which was perfect and made them VERY easy to press out (I usually have problems with that stage and end up having hands covered in dough!) They weren't the best I've had, but probably the best I've made so far!

Cake Mix Cookies VIII

I absolutely love this recipe, and I have tried them all kinds of ways. Our personal favorite is probably strawberry cake mix with chocolate chips, though the chocolate cake mix with butterscotch chips are a close second! I followed others suggestions about adding a little oil and vanilla extract, and they're much less sticky that way. I also experimented with making them in muffin tins, which was a big hit. They need to cook a bit longer, and yield close to 2 dozen. These are a regular treat out of my kitchen!

Glazed Meatloaf I

My picky husband even loved this! I used turkey meat and cooked it on a cookie sheet like I read in one review, which worked very well. The meat needed a little more seasoning, so I'll take the advice of other reviews next time and use the onion soup mix. Great recipe!
